Add bacon and eggs to a cauliflower rice stir fry for the perfect healthy breakfast

There is a restaurant in Nashville that makes fried rice with bacon and eggs. It’s truly one of the best things I’ve ever had.

It is this rich and flavorful breakfast dish that is always topped with a perfectly cooked egg. This cauliflower rice stir fry is my grain free version of that classic dish.

I recently spent a weekend with all of my college roommates and one of them immediately said to me, “Is that stir fry dish like a healthy version of Tavern breakfast?” She knew exactly where I was going with this recipe.

I just hope this cauliflower rice breakfast stir fry can live up to the hype of the original. I have improved upon the original by elevating the ingredients.

This cauliflower rice breakfast stir fry is made with all whole30 compliant ingredients. If you’ve ever done a whole30, you know how hard it can be to get that feeling of comfort food, but this dish became my whole30 comfort food for sure.

Choose any veggies you want to make this healthy cauliflower rice stir fry

My favorite thing about this cauliflower rice breakfast stir fry is that the ingredients are super flexible. To make this you need only four main ingredients: bacon, veggies, cauliflower rice and an egg or two. From there you can start to customize it however you want.

My go to combo lately has been chopped onion and baby kale for my veggies with salt, pepper, and crushed red pepper for my spices. Then I top it all off with a poached egg. Maybe two eggs if I’m really hungry.

Some of the other combinations I like for my cauliflower rice stir fry are squash or pumpkin and spinach in the fall.

I love to add some turmeric and black pepper for extra flavor. I also like using any leftover veggies from dinner the night before because it speeds up the cooking process and helps me to not waste food!

Use simple ingredients that you might already have on hand in your kitchen for this breakfast stir fry

My same friend who told me that she was excited about this cauliflower rice breakfast stir fry recipe told me that there were too many ingredients and that she was intimidated to make it!

That is never my intention with my recipes and I really want you all to see how simple it can be to make this healthy, low carb meal so I made a little video tutorial.

One of the things I included in the video tutorial for this cauliflower rice breakfast stir fry is how to make a perfect poached egg. Many people seem to be intimidated by cooking poached eggs in particular, but its actually easier than you might think. I have a blog post all about how to make the perfect poached egg.

How to make a cauliflower rice stir fry with bacon and eggs

To make this cauliflower rice breakfast stir fry start with 2-3 strips of bacon in a frying pan over medium-low heat. Usually I bake my bacon, but when I make it in a pan I am sure to cook it slow and low! This allows it to get nice and crispy without cooking too fast and burning.

Remove the bacon from the pan, but leave the grease in the pan. Add whatever veggies you want to cook except for any green that will cook quickly.

I always add things like onions or squash at this step and cook them for about 3 minutes. Next add in some greens and cook until wilted.

Add cauliflower rice to the pan along with the cooked and chopped bacon and saute for 5 minutes. Plate the cauliflower rice breakfast stir fry and top with any style of egg that you like!!

Cauliflower Rice Breakfast Stir Fry

Cauliflower rice stir fry made with veggies, bacon and eggs

Ingredients

  • 2 strips of bacon
  • 1 cup veggies of choice
  • 1 1/2 cups cauliflower rice – fresh or frozen
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • Optional: 1/4 tsp smoked paprika and 1/2 tsp turmeric

Instructions

  1. Cook bacon in a frying pan over medium-low heat. Cook to desired crispness. Chop veggies (except for cauliflower rice) while the bacon cooks. Remove cooked bacon from the pan, but leave bacon grease behind.
  2. Add veggies to the pan with bacon grease. Cook over medium-low heat until soft about 3-4 minutes.  Season veggies with salt, pepper, and garlic powder. Add smoked paprika and turmeric to season, if desired.
  3. While the veggies cook prepare an egg to put on top. I like fried or poached for this recipe.
  4.  Add cauliflower rice and chopped bacon into the pan and toss to mix. Saute until cauliflower rice is fully warmed through about 5 minutes. Place cauliflower rice stir fry on a plate and top with an egg
