Banana pancakes remind me of spending Sunday mornings with my family. My dad always let us pick which type of pancakes we wanted to make.
In my opinion, there is no better smell than bananas caramelizing on a hot griddle. This classic banana pancake recipe will transport you straight back to the tastes and smells of childhood.

Use the following steps to make extra fluffy homemade banana pancakes.
- Do not over mix the batter – When you mix the dry ingredients into the wet ingredients, mix until just combined. It is okay if there are some lumps.
- Allow the batter to settle for 10 minutes – Once the batter is mixed. Allow it to settle for 10 minutes before cooking the pancakes.
- Only flip each pancake once – Flipping the pancakes takes the air out of them. Only flip each pancake once to keep them tall and fluffy.

- Bananas

As bananas ripen the sugar content in the banana increases and they become sweeter. To add extra sweetness to these fluffy banana pancakes I use ripe bananas.
How to make fluffy banana pancakes
Step 1: Prepare banana Pancake Batter
To begin, whisk together flour, baking powder, and salt in a small bowl. In a separate bowl mash one banana with the back of a fork or a potato masher.
Then, add the egg, greek yogurt, milk, melted butter, vanilla extract and maple syrup to the bowl with the mashed banana and whisk to combine.
Next, pour the dry ingredients into the bowl with the wet ingredients and whisk together until the dry ingredients are just mixed in – it is good to leave some lumps. Allow the batter to sit for at least 10 minutes.
Slice the second banana and set to the side.
Step 2: Cook Pancakes in a frying pan
Then, grease a nonstick skillet with oil and heat over medium heat. When warm, pour a ¼ cup of the batter into the pan and place 3-4 slices of banana in each pancake.
When the surface of the pancake is covered with bubbles, flip the pancake and cook on the other side for another minute or so. Repeat this process until all of the batter is used.
Can I freeze banana pancakes?
Yes! Make the pancakes according to instructions. Then, cool them completely.
Place cooled pancakes in an airtight bag and place in the freezer. Freeze for up to 3 months.
