What is the #1 thing you crave on game day? For me its hand down buffalo chicken anything with chips and salsa as a very close second. I love wings, but sometimes I’m a diva and I don’t want to eat off the bone. Its just that simple. That’s where these buffalo chicken bites come in. They gave me all of the satisfaction of a buffalo chicken wing with the ease of a single bite sized piece.

Buffalo chicken bites are the perfect low carb salad topper or appetizer for game day! Made with almond flour crust they are crisp on the outside with a delicious simple sauce. Buffalo Chicken bites are perfect for your next meal prep or party!

These buffalo chicken bites are simply breaded with an egg wash, almond flour, salt and pepper and then baked to give them a little crunch. I always bake on a baking sheet lined with parchment for easier clean up. After the buffalo chicken bites are baked they are tossed in a butter and hot sauce mixture and then are ready to be served.

I served mine on a salad with cucumbers and ranch dressing because I felt like I needed a little infusion of veggies, but these could be easily served as an appetizer on a toothpick with some blue cheese or ranch dipping sauces. Buffalo Chicken Bites

ingredients:

  • 2 boneless skinless chicken breasts
  • 2 eggs
  • 3/4 cup almond flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup butter
  • 1/3 cup hot sauce

instructions:

  1. Preheat oven to 350F
  2. Cube chicken breasts into bite-size pieces
  3. Beat 2 eggs until fluffy in a small bowl
  4. In  a separate dish combine almond flour,  salt, and pepper
  5. Bread the buffalo chicken bites by dipping them into the egg wash first and then rolling them into the almond flour mixture
  6. Place breaded chicken cubes on a lined baking sheet and bake for 25 minutes
  7. While the chicken is baking heat 1/4 cup of butter in a saucepan over low heat. When butter is fully melted mix in 1/3 cup hot sauce and keeps warm until chicken is cooked
  8. Take buffalo sauce mixture off the heat and toss in cooked chicken cubes
  9. Serve immediately  and store leftovers in an airtight container in the refrigerator for 3-4 days
