I love wings, but sometimes I don’t want to eat off the bone. That’s when its perfect to have these buffalo chicken bites. They gave me all of the satisfaction of a buffalo chicken wing with the ease of a single bite sized piece.

The best part about these bites is that they can be easily made paleo and whole30 compliant. This delicious and healthy little snack, lunch or appetizer comes together in about 30 minutes.

One thing I like about these buffalo chicken bites is that they can be served in many different ways. They make for a delicious appetizer. I like to serve them on a platter with some of my homemade Whole30 friendly ranch and some celery.

I also like to make them on a Sunday as a part of my meal prep. Then I can use these little buffalo chicken bites in meals throughout the week. They are a great salad topper for a simple romaine lettuce salad.

You only need a few simple kitchen tools and ingredients to make a batch of the buffalo chicken bites. Grab a sharp knife to cube the chicken into bite size pieces. You will also need a cutting board, a baking sheet, some mixing bowls and a frying pan before you get started cooking.

The basic ingredients that you will need in order to make these buffalo chicken bites are some boneless skinless chicken breasts, eggs, almond flour, salt pepper, butter or ghee and some hot sauce.

If you are looking to make these Buffalo Chicken Bites Whole30 compliant you can just swap out the butter for 1/4 cup of ghee and make sure you use Whole30 compliant hot sauce, like Frank’s Red Hot (the original is compliant)!

These buffalo chicken bites are so easy to make. Cut some boneless skinless chicken breast into cubes. Simply bread them with an egg wash, almond flour, salt and pepper. and then bake to give them a little crunch.

I always bake on a baking sheet lined with parchment for easier clean up. After the buffalo chicken bites are baked they are tossed in a butter and hot sauce mixture and then are ready to be served. If you want to make Whole30 buffalo chicken bites, just sub the butter for some ghee.

I served mine on a salad with cucumbers and ranch dressing because I felt like I needed a little infusion of veggies, but these could be easily served as an appetizer on a toothpick with some blue cheese or ranch dipping sauces.

Buffalo Chicken Bites

ingredients:

  • 2 boneless skinless chicken breasts
  • 2 eggs
  • 3/4 cup almond flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup butter
  • 1/3 cup hot sauce

instructions:

  1. Preheat oven to 350F
  2. Cube chicken breasts into bite-size pieces
  3. Beat 2 eggs until fluffy in a small bowl
  4. In  a separate dish combine almond flour,  salt, and pepper
  5. Bread the buffalo chicken bites by dipping them into the egg wash first and then rolling them into the almond flour mixture
  6. Place breaded chicken cubes on a lined baking sheet and bake for 25 minutes
  7. While the chicken is baking heat 1/4 cup of butter in a saucepan over low heat. When butter is fully melted mix in 1/3 cup hot sauce and keeps warm until chicken is cooked
  8. Take buffalo sauce mixture off the heat and toss in cooked chicken cubes
  9. Serve immediately  and store leftovers in an airtight container in the refrigerator for 3-4 days
