Ingredients
- Red Potatoes – This air fryer potatoes recipe is really simple. Just wash, cut, and season your potatoes and then they are ready to cook.
- Olive Oil – I usually use extra virgin olive oil but you can use any cooking oil that you prefer. Avocado oil is another great choice.
- Salt, Onion Powder, Oregano, Chili Powder – This blend of seasonings makes for really tasty potatoes. Feel free to add different seasonings or omit some based on your preferences.
- Parmesan Cheese and Fresh Herbs – These are optional but I love adding some grated parmesan and fresh herbs on top of my potatoes after they are done cooking.
Ingredient Substitutions
Red potatoes have the fastest cooking time of all potatoes due to their high moisture content and thin skin so I recommend sticking with red potatoes if possible. If you do try a different kind of potato, I recommend baby potatoes of any color, Yukon gold potatoes, or russet potatoes.
Different types of potatoes may require a longer cooking time. Use a fork to make sure they are tender inside.
I like making a blend of salt, onion powder, oregano, and chili powder to use on these red potatoes in the air fryer but you can add or omit based on your liking.
Garlic powder, Italian seasoning, thyme, and black pepper are all other great options. You can switch up the flavor profile even more by trying ranch seasoning or cajun seasoning.
You can serve these air fryer-roasted potatoes just as they come out of the air fryer or you can garnish with your toppings of choice. I like to sprinkle parmesan cheese and fresh herbs on top such as basil, parsley, or fresh rosemary.
How to make
Step 1: Prepare Potatoes
To start, wash potatoes and cut into fourths; each piece should be about ½”. Place in a mixing bowl, drizzle the olive oil and toss the potatoes in it.
Mix the salt, onion powder, oregano, and chili powder in a small bowl and pour over the potatoes (Image 1). Toss to coat the potatoes evenly and pour into the air fryer (Image 2).
Step 2: Air Fry and Serve
Next, Air Fry at 400F for 15-18 minutes. Take out the basket and give it a good shake every 6 minutes (Image 3).
If you like them really crispy, cook for the full 18 minutes. Less crispy, 15 minutes.
Allow to cool slightly (Image 4) and then top with freshly grated parmesan cheese and fresh herbs. Serve and enjoy.
Storage and reheating
Let the air fryer potatoes cool and then place them in an airtight container. They can be stored in the fridge for up to four days.
Reheat in the air fryer at 400F for 5 minutes to crisp. Top with fresh parmesan cheese and herbs before serving.
