Air Fryer Red Potatoes

These air fryer red potatoes are the perfect quick and easy side for any dinner.

Ingredients

  • 24 oz red potatoes
  • 1 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp chili powder
  • Optional toppings: parmesan cheese and fresh herbs

Instructions

  • Wash potatoes and cut into fourths - each piece should be about ½” and place in a mixing bowl. Toss potatoes in olive oil.
  • Mix the salt, onion powder, oregano and chili powder in a small bowl and pour over potatoes. Toss to coat the potatoes evenly.
  • Pour into air fryer basket. Air Fry at 400F for 15-18 minutes - take out the basket and give it a good shake every 6 minutes. If you like them really crispy, cook for the full 18 minutes. Less crispy, 15 minutes.
  • Allow to cool slightly and then top with freshly grated parmesan cheese and fresh herbs.

Notes

You can store leftovers in an airtight container in the refrigerator for up to 4 days.
