Optional toppings: parmesan cheese and fresh herbs
Instructions
Wash potatoes and cut into fourths - each piece should be about ½” and place in a mixing bowl. Toss potatoes in olive oil.
Mix the salt, onion powder, oregano and chili powder in a small bowl and pour over potatoes. Toss to coat the potatoes evenly.
Pour into air fryer basket. Air Fry at 400F for 15-18 minutes - take out the basket and give it a good shake every 6 minutes. If you like them really crispy, cook for the full 18 minutes. Less crispy, 15 minutes.
Allow to cool slightly and then top with freshly grated parmesan cheese and fresh herbs.

You can store leftovers in an airtight container in the refrigerator for up to 4 days.
