I don’t talk too much about this on here, but when I was a vegan for about 9 months a few years ago, the thing that brought me back to an omnivore style of eating was eggs. They are the perfect convenience food and so darn delicious. I fancy myself a bit of an egg expert and I am so happy to share that expertise with all of you! The infographic lists basic instructions for how I make my four favorite types of eggs. Other than those instructions here are some of my other tips:

If it fits into your budget, buy pasture raised eggs. That’s how you get that beautiful orange yolk and the taste is superior

White vinegar seems to work best for poached eggs

For hard boiled eggs remove eggs from fridge a bit before cooking so that they don’t crack when you add them to the boiling water

Add a splash of cream to your eggs before scrambling to make them even fluffier
