Why You’ll Love This Recipe

  • Money saver – Pumpkin spice lattes can add up so quickly, so I love keeping this on hand in the refrigerator.
  • Easy delicious coffee – This syrup is so easy to make with simple ingredients, and it will become your favorite coffee treat at home!
  • Fall flavors – Nothing says fall like pumpkin spice. It’s like autumn in a cup!

Serving Suggestions

This pumpkin spice syrup is perfect for any coffee drinks, like some cold brew at home. For a decaf option, you could put it in hot chocolate.

Pair your pumpkin spice latte with a fall treat, like this pumpkin banana bread, pumpkin challah french toast, or chocolate chip pumpkin scones. You could also have it with apple cinnamon muffins or an apple tart with caramel drizzle.

You can use this syrup for many things other than just copycat Starbucks pumpkin spice lattes! Warm this syrup up and use it to top waffles, pancakes, oatmeal and other baked goods.

It would be delicious as a replacement for caramel on vanilla bean ice cream.

Why isn’t Their Pumpkin in the syrup?

Okay so I might be wrong, but pumpkin doesn’t really taste like anything. Real pumpkin puree provides a texture rather than pumpkin flavor.

When you think of a classic pumpkin recipe like pumpkin pie, the flavor that you are remembering is pumpkin pie spice. So, for this pumpkin spice latte syrup recipe I didn’t use any pumpkin.

I just used pumpkin pie spice, coconut milk, coconut sugar and a pinch of salt. I promise you won’t miss the pumpkin at all and this will satisfy all of your fall pumpkin spice cravings!

Ingredients

  • Coconut cream or coconut milk – I actually like to use light coconut milk to make a thinner syrup
  • Coconut sugar – You can sub regular granulated sugar, cane sugar, or light brown sugar for this
  • Pumpkin pie spice – this spice will give you the quintessential
  • Salt – a bit of salt intensifies and enhances all of the flavors

Ingredient Substitutions

It is possible to use regular dairy milk to make this pumpkin sauce, but in my opinion the consistency and taste achieve by using the coconut milk is much better. This syrup does not taste like coconut once the pumpkin pie spice is mixed in.

If you don’t have pumpkin pie spice, you can make your own with a mixture of cinnamon, nutmeg, ginger, cloves and allspice. For a bit of vanilla flavor in your pumpkin syrup, you could add a dash of vanilla extract as well.

How to make

Step 1: Combine ingredients

To begin, add the can of coconut milk to a sauce pan. Then, heat the coconut milk over medium heat whisking occasionally until the solids have melted.

Next, add the coconut sugar and pumpkin pie spice to the small saucepan and whisk to combine. Heat over medium-high heat until the mixture comes to a boil.

Step 2: Simmer to thicken

Then, reduce to a simmer. Simmer the mixture uncovered whisking frequently for 15 minutes. The mixture will reduce to a thick syrupy consistency.

Step 3: Stir in a pinch of salt and cool

Next, remove the pot from the heat and whisk in the salt. Then, allow the mixture to cool completely and transfer to airtight container glass jars for storage.

Step 4: Enjoy!

Finally, use one to two tablespoons of the syrup in your favorite fall beverages!

Homemade Pumpkin Spice Latte Recipe made with Starbucks Pumpkin Spice Syrup

  • 1 tbsp pumpkin spice latte syrup
  • 1/2 cup milk of choice
  • 2 shots of espresso

Add two shots of espresso to a mug. Then, use a milk steamer to froth together the milk and pumpkin spice syrup. Finally, pour the frothed milk over the shots of espresso and enjoy! Add some cinnamon sticks to the mugs to make it even more festive.

I use this frother for my lattes. It has both a cold and hot setting so I can use it for this latte and the cold brew recipe below!

Homemade Pumpkin Spice Cold Foam Cold Brew Recipe

  • 2 tbsp pumpkin spice latte syrup
  • 1/4 cup milk of choice – I like to use 1 tbsp heavy cream and 3 tbsp half and half
  • 1 cup cold brew coffee – I use my homemade cold brew recipe
  • Ice

Fill a glass or glass mason jar with ice. Pour cold brew over the ice. Then, add syrup and milk to a milk frother and froth on the cold setting. Finally, pour the cold foam milk over the cold brew. Mix and enjoy!

You can also try this pumpkin spice syrup in a Starbucks iced shaken espresso drink. Just mix some of the syrup in with your espresso prior to shaking it with ice. Top with cold foam and extra pumpkin pie spice.

Storage

Once prepared, allow this syrup to cool completely and then transfer to an air tight container. I like to use a mason jar. Store in the fridge for up to two weeks.

If you make this syrup with self stable coconut milk, you can store it on the counter at room temperature for up to one week.

This syrup is so good! I love flavored lattes but find most to be too sweet. This syrup is the perfect balance of spicy and sweet, and now I can’t wait to cozy up with a latte and a book! I only had full fat coconut milk and granular sugar on hand and had no issues 🙂

Finally made this syrup and it did not disappoint! So easy, delicious and perfect for fall! I love a touch of sweetness in my coffee so this mixed in with my nut pods has been a game changer – I will be using it all fall & winter long!

I’ve been wanting to make this for weeks, but I kept forgetting to get more coconut sugar at the store. I got some this week, and it was well worth the wait! YUM! I could honestly drink this straight out of the jar, but instead I mixed it with Vanilla Nut Pods and put it in my iced coffee. So good!

I made this syrup the other day and I am obsessed! I normally don’t put any sweetness in my coffee, but this is just the right amount and makes my cold brew taste so delicious. I can’t wait to try it in hot coffee too. I used full fat coconut milk because my store didn’t have coconut cream and I didn’t have any issues. I think it just took longer to form into a syrup, but that’s okay!! Thanks so much for creating this recipe. I literally eat spoonfuls of it from the fridge…oops.

Made this for my coffee today and it was so delicious. I always love caramel sauce in my coffees but I’ve had to stop using it since they always contain high fructose corn syrup. I’m so excited to have found a festive alternative!

This is so yummy in my hot or cold coffee! I love that I get the pumpkin spice without the sweetness overload. Now I can choose what creamer I prefer and still get to add a pumpkin twist.

Hello! I made it and it’s absolutely delicious. I refrigerated it since then, is it supposed to be rock solid? Or a syrup consistency still? Not sure how to blend it into my milk anymore /:

Hi Lisa! It is made with coconut cream that is solid when chilled. It should not be rock solid by any means. Mine is thicker in the fridge but not solid. The beauty of coconut is that it will melt very quickly. I recommend running the jar that you are storing your syrup in under hot water to melt it slightly so you can pour it! Thanks!

I made this this morning and it’s SO GOOD. Like others have said, I can’t get behind the “healthy” syrups that taste artificial. This really hits the spot without being too sugary. Quick question, though, does it have to be refrigerated?

SO GOOD! I’ve been trying different recipes for years trying to find one that doesn’t have that sugar flavor that permeates the coffee and makes it undrinkable. This is the first one that met that standard! Very excited to incorporate this into my daily fall activities.

I’ve tried quite a few creamers- some dairy, some non dairy and have been disappointed with the artificial taste of them. I’ve just been using creamer lately but needed something to give it some flavor and sweeten it just a little. This was perfect! Thanks!

I just made this syrup and it is amazing!!! First of all, it makes your house smell delicious. Second of all, it’s the perfect amount of sweetness for those of us who don’t like too much sugar in our coffee. It’s also super easy to make and the ingredients are inexpensive 😊
