Pumpkin Spice Latte Syrup
A homemade pumpkin spice latte syrup that you can use to sweeten your coffee or on top of other baked goods

Ingredients
1
can coconut milk
13.5oz - I like to use light coconut milk
1
cup
brown sugar
1
tbsp
pumpkin pie spice
1/4
tsp
salt
1
tsp
vanilla bean paste
(optional)
Instructions
Add the can of coconut milk to a sauce pan
Heat the coconut milk over medium heat whisking occasionally until the solids have melted
Add the brown sugar, pumpkin pie spice, salt and vanilla to the pot and whisk to combine
Heat over medium-high heat until the mixture boils
Reduce to a simmer
Simmer the mixture uncovered whisking frequently for 15 minutes
The mixture will reduce to a thick syrupy consistency
Remove the pot from the heat
Allow the mixture to cool completely and transfer to an airtight container for storage
Use 1-2 tbsp of the syrup in your favorite fall beverages!
Notes
You can use condensed milk in place of coconut milk but cut the amount of sugar in half to 1/2 cup
