Serving Suggestions
I chose bok choy as a green veggie to add to this easy teriyaki pork chops and bok choy dish because I love the sharp flavor in contrast to the sweet teriyaki sauce. You can get baby bok choy at many grocery stores.
I served this dish with some plain white rice because we’ve been on a big white rice kick in our house lately. If you prefer brown rice or quinoa, that would be great with this recipe as well. I also love using these pork chops in a fried rice, like this pantry chicken fried rice.
If you want to have a lower carb meal then this dish would be perfect with cauliflower rice.
I also love serving this with a simple salad with a mason jar salad dressing or green dream dressing.
Ingredients
- Boneless pork chops – I use boneless skinless pork chops to keep this recipe simple and easy, but you could also use bone-in pork chops
- Cornstarch – This thickens the sauce to make it the perfect consistency
- Soy sauce – Soy sauce adds so much flavor to the dish. You could also use tamari, coconut aminos or mirin.
- Honey – add honey to sweeten your sauce and give it that delicious teriyaki taste
- Fresh ginger – fresh ginger is a much more delicate taste than ground ginger, so I love using fresh here. If you use ground, lessen the amount
- Fresh garlic – Garlic adds so much great flavor to your dish. If you love garlic, feel free to add even more
- Water – Use the cold water in this recipe to get your sauce to the perfect consistency
- Baby bok choy – baby bok choy is my favorite vegetable with this dish. It cooks up quickly and tastes great
- Olive oil – I use extra virgin olive oil but you could also use light sesame oil here
- Salt – you do not need much salt in this recipe because the soy sauce will add most of it
Ingredient Substitutions
If you cannot find it you can substitute another green veggie in like steamed snap peas or steamed broccoli. Feel free to add more vegetables too, like carrots, peppers, asparagus or green onions. You can also use teriyaki chicken or tofu in place of the pork.
In place of the drizzle of honey, you could use brown sugar to sweeten your sauce. A little chopped pineapple or pineapple juice would also be delicious. You could add a little rice vinegar to your sauce as well.
You can also use this sauce as a teriyaki marinade for your meat. You can soak your meat in the marinade and use it for cooking in the slow cooker, baking in the oven or grilling. If you grill these pork chops, use a meat thermometer to check for an internal temperature of 145 degrees F. I love using this sauce in so many different ways to make new recipes!
How to Make
Step 1: Prep Ingredients
To make this easy teriyaki pork chops and bok choy start by trimming the fat off of your pork chop and slice into thin strips. Take corn starch or tapioca starch and toss the pork in it in a large mixing bowl (Image 1). Chop the bok choy and set aside (Image 2).
Step 2: Make sauce and saute pork
Make the teriyaki sauce by combining garlic, ginger, honey, soy sauce and water in a small bowl (Image 3). Heat avocado oil in a wok or large skillet over medium-high heat. Once oil is hot add the pork to the pan.
Toss the pork frequently and cook until just starting to brown on all sides about 5 minutes (Image 4).
Step 3: Combine everything in the pan
Pour teriyaki sauce into the pan (Image 5) and allow it to bubble and thicken for 2 minutes stirring occasionally. Add chopped boy choy to the wok and toss until fully covered in the sauce (Image 6). Cook the entire dish for another 2 minutes.
Step 4: Serve and Enjoy!

Storage and reheating
Once prepared, allow the pork and bok choy to cool completely. Transfer to an airtight container and store in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave.

Easy Teriyaki Pork and Bok Choy
Ingredients
- 1 lb boneless pork chops
- 1 tbsp corn starch
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp fresh grated ginger
- 1 tbsp fresh minced garlic
- 1/4 cup water
- 2 cups chopped baby bok choy
- 1 tbsp olive oil
- Salt
Instructions
- Trim excess fat from pork and slice into thin strips
- Place pork in a mixing bowl with the corn starch and toss until all of the pieces of pork are evenly coated
- Chop baby bok choy into bite-size pieces
- Prepare the sauce by grating fresh garlic and ginger
- Mix garlic and ginger with honey, soy sauce, and water
- Heat avocado oil in a large pan or wok over medium heat
- When the oil is hot add the pork to the pan and season with salt
- Allow the pork to cook, tossing frequently for about 5 minutes until just browned on all sides
- Increase the heat to medium-high, add the sauce to the pan and allow to bubble and thicken for 2 minutes, tossing occasionally
- Add chopped boy choy to the pan and toss to coat in the sauce
- Allow the whole dish to cook for an additional 2 minutes or just until the bok choy has softened
- Remove the pan from heat and serve with rice or cauliflower rice and garnish with sesame seeds
