Ingredients
- Chicken breasts – boneless skinless chicken breasts are the easiest for this recipe
- Balsamic vinegar – the balsamic vinegar is used in the marinade to make the most delicious chicken with perfect flavor
- Olive oil – I used extra virgin olive oil, but you can also use any neutral oil you would like
- Italian seasoning – italian seasoning is the easiest to use, but you can also use your own combination of dried herbs and spices
- Ciabatta rolls – I love these sandwiches on ciabatta rolls, but any hearty sandwich bread will work
- Garlic – the garlic clove will be rubbed on the rolls to give just a hint of garlic flavor
- Fresh mozzarella cheese – the slices of fresh mozzarella cheese are a must in this recipe! You can’t have a classic caprese without it
- Tomatoes – I love using heirloom tomato slices when they are in season for juicy and sweet fresh tomatoes
- Basil – a bit of fresh basil to finish off the sandwich is the perfect addition
- Balsamic glaze – to keep things simple, I like to buy a store-bought glaze rather than make my own
Ingredient Substitutions
Instead of doing the chicken in a skillet, you can also grill chicken for your sandwich or cook it indoors on a grill pan.
Sourdough, focaccia, or even sandwich bread would be a great options in place of ciabatta bread for your caprese salad sandwich.
Caprese chicken sandwich recipes are totally customizable. For other variations on this sandwich, you could try adding roasted red peppers, a couple tablespoons of basil pesto, sun-dried tomatoes, anything you would like! If you would like a bit more creaminess and tanginess on your sandwich, add a bit of mayo to the bread.

How to make
Step 1: Make the Chicken
Cut each chicken breast into 2 thinner filets. Whisk balsamic vinegar, olive oil and italian seasoning in a bowl – toss chicken in marinade, cover and place in the fridge for 30 mins to 1 hour (Image 1).
Heat a skillet over medium high heat and place marinated chicken filets in the skillet. Cook 4-5 minutes each side (Image 2). Remove chicken from the skillet when a thermometer reads an internal temperature of 165 degrees F.

Step 2: toast the ciabatta
While the chicken is cooking, turn the oven on to broil. Cut the ciabatta rolls in half. Rub each side with the garlic clove and brush with oil. Place on a baking sheet cut side up and place under the boiler for 2-3 minutes – just until they start to brown (Image 3).

Step 2: Assemble the Sandwich
Assemble the sandwiches with the chicken (Image 4) then mozzarella (Image 5), tomato, basil (Image 6) and a drizzle of balsamic glaze. Season with kosher salt and black pepper to taste.

Storage and reheating
This caprese chicken sandwich is best enjoyed immediately. You can make the chicken ahead and assemble later. Keep your chicken in an airtight container in the fridge for up to four days. I prefer not to reheat the chicken and just enjoy it cold on the sandwich.
