Use this 4 ingredient Pumpkin Spice Latte Syrup to make a delicious and easy pumpkin spice latte at home. Skip the Starbucks drive through and make the most delicious pumpkin spice latte for less money and with better ingredients.

I love sitting down with a warm pumpkin spice latte when the temperatures start to drop, but I don’t love paying Starbucks prices or waiting in that drive through. I tested this syrup MANY times to get the flavor just right and now I like making my PSL even better at home!

I like to have my homemade pumpkin spice latte with a mini maple pecan scone or a healthy pumpkin muffin!

Why You’ll Love This Recipe

  • No pumpkin puree! – many homemade pumpkin spice latte recipes call for canned pumpkin puree, but when added to coffee it leaves a gritty texture AND you can’t even taste it. My recipe focuses on what you CAN actually taste: the pumpkin pie spice! Leave the pumpkin puree out and keep the pumpkin flavor!
  • Money saver – Pumpkin spice lattes can add up so quickly, so I love keeping this on hand in the refrigerator. I can make a whole batch for less than the price of one latte at starbucks.
  • Versatile syrup – This syrup is not just for hot lattes. I love to use it to make pumpkin cold foam for cold brew, as a sweetener for chai lattes or to drizzle over fall desserts! A drizzle of this over ice cream with a slice of pumpkin pie is truly perfect.

Ingredients You’ll Need

  • Coconut cream or coconut milk – I actually like to use light coconut milk to make a thinner syrup. If you’re allergic to coconut milk you can use a can of sweetened condensed milk and cut the amount of sugar you use in half.
  • Light brown sugar – You can sub regular granulated sugar, dark brown sugar or coconut sugar for this
  • Pumpkin pie spice – this spice will give you the quintessential pumpkin pie flavor without any gritty pumpkin puree
  • Salt – a bit of salt intensifies and enhances all of the flavors
  • Vanilla bean paste – this is optional, but I do think swirling a bit of this in at the end really intensifies all the flavors!

How to make an easy pumpkin spice latte syrup!

Step 1: Combine all ingredients in a sauce pan

To begin, add one can of coconut milk to a sauce pan and heat the coconut milk over medium heat whisking occasionally until the solids have melted. Next, add 1 cup brown sugar and 1 tbsp pumpkin pie spice to the small saucepan. Whisk to combine. Heat over medium-high heat until the mixture comes to a boil.

Step 2: Simmer to thicken

Then, reduce to a simmer. Simmer the mixture uncovered whisking frequently for 15 minutes. The mixture will reduce to a syrupy consistency. High fat coconut milk will be a thicker syrup than light coconut milk.

Step 3: Stir in a pinch of salt and cool

Next, remove the pot from the heat and whisk in the salt. Then, allow the mixture to cool completely and transfer to airtight container glass jars for storage in the refrigerator.

Homemade Pumpkin spice coffee drink recipes

Copycat Starbucks Pumpkin Spice Latte: Brew two shots of espresso into a mug. Then, use a milk steamer to froth together 1/2 cup milk of choice and 1 tbsp pumpkin spice latte syrup. Finally, pour the frothed milk over the shots of espresso and enjoy! If you like it extra sweet, mix 1 tbsp of the syrup in with the espresso shots

Copycat Starbucks Pumpkin Cream Cold Brew: Fill a glass or glass mason jar with ice. Pour cold brew over the ice. Then, add 2 tbsp pumpkin spice latte syrup and 1 tbsp heavy cream + 3 tbsp half and half to a milk frother and froth on the cold setting. Finally, pour the cold foam milk over the cold brew. Mix and enjoy!

You can also try this pumpkin spice syrup in a Starbucks iced shaken espresso drink. Just mix some of the syrup in with your espresso prior to shaking it with ice. Top with cold foam and extra pumpkin pie spice.

Storage

Once prepared, allow this syrup to cool completely and then transfer to an air tight container. I like to use a mason jar. Store in the fridge for up to two weeks.

Pumpkin Spice Latte Syrup

A homemade pumpkin spice latte syrup that you can use to sweeten your coffee or on top of other baked goods

Ingredients

  • 1 can coconut milk 13.5oz – I like to use light coconut milk
  • 1 cup brown sugar
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 tsp vanilla bean paste (optional)

Instructions

  • Add the can of coconut milk to a sauce pan. Heat the coconut milk over medium heat whisking occasionally until the solids have melted
  • Add the brown sugar, pumpkin pie spice, salt and vanilla to the pot and whisk to combine. Heat over medium-high heat until the mixture boils (careful because it can quickly boil over the pot)
  • Reduce to a simmer and simmer the mixture uncovered whisking frequently for 15 minutes. The mixture will reduce to a syrupy consistency – if you use full fat coconut milk it will be thicker, if you use light coconut milk it will be thinner
  • Remove the pot from the heat. Allow the mixture to cool completely and transfer to an airtight container light a glass jar with a lid for storage. Store in the refrigerator for up to 2 weeks. Use 1-2 tbsp of the syrup in your favorite fall beverages!

Recipe Notes

  • You can use condensed milk in place of coconut milk but cut the amount of sugar in half to 1/2 cup
Drink Recipes:
  • Pumpkin Spice Latte:
    • 1 tbsp pumpkin spice latte syrup
    • 1/2 cup milk of choice
    • 2 shots of espresso
    • Steam milk with 1 tbsp latte syrup. Brew 2 shots of espresso and pour steamed sweetened milk over the espresso. If you like it extra sweet, mix an extra tablespoon of the syrup in with the espresso
  • Pumpkin Spice Cold Foam Cold Brew:
    • 2 tbsp pumpkin spice latte syrup
    • 1/4 cup milk of choice – I like to use 1 tbsp heavy cream and 3 tbsp half and half
    • 1 cup cold brew coffee – I use my homemade cold brew recipe
    • Ice
    • Use a hand frother to mix together latte syrup and milk. Pour cold brew into a glass with lots of ice and slowly pour cold foam over top.

    I make this syrup every year and look forward to it! Last year I thought I would switch things up and try a different recipe and that was a big mistake- this is superior the best pumpkin latte syrup recipe out there!

    I used evaporated milk because that’s all I had on hand. Mine came out thick like caramel, is that from letting it simmer too long? Either way it’s phenomenal!!

      Hi there! Evaporated milk will make it much thicker. In the future if you use evaporated milk and want a thinner consistency, just add 1/2 cup water while it is simmering. Glad you like it though!
