  • Meal Prep – An egg bake is one of the easiest ways to make breakfast for the whole week. It’s simple with a prep time of only 5-10 minutes, and it reheats so well.
  • Easy breakfast option – Mornings can be so hectic, but I know it’s important to get something substantial. With over 15 grams of protein per square, having this egg bake on hand is extremely helpful!
  • Customizable – You can mix up all of the add ins for this egg bake to make it different each week! Use different meats or veggies, garnish with different sauces and herbs, you can make with any variations you’d like.

Serving suggestions

While this cottage cheese egg bake is great for meal prep, you could also make it for brunch! Quiches are a quintessential brunch item, and egg bakes are basically crustless quiche. Serve it with some crispy bacon and honey butter biscuits for a simple brunch spread.

For a coffee to go with it, make some cold brew or an iced shaken espresso.

Ingredients

  • Ground breakfast sausage – I like to use turkey sausage
  • Eggs – use a dozen of your favorite eggs to make this egg bake
  • Cottage cheese – the cottage cheese makes the eggs nice and silky while adding even more protein
  • Garlic powder, onion powder, black pepper, salt – I use a simple spice blend to make this cottage cheese egg bake. You can adjust to your taste
  • Chopped spinach – you can use fresh or frozen, just be sure to remove the moisture from frozen
  • Cherry tomatoes – I use cherry tomatoes because they are great anytime of year, but you can use any kind you would like

Ingredient Substitutions

If you would like to add a bit more protein, you could also incorporate egg whites into your egg bake.

I made this gluten-free egg casserole with ground turkey sausage, but you could use pork sausage, chicken sausage, bacon, ham, anything you would like. Feel free to add more vegetables too. Red bell peppers or mushrooms would be great. Kale could be a good substitute for spinach. Use whatever you enjoy!

I don’t find the egg bake needs oil or butter, but if you want, you could add some melted butter to your egg mixture for a buttery flavor. Additionally, to thicken it, you can add some all purpose flour.

I didn’t add any extra cheese, but shredded cheddar cheese, monterey jack, or mozzarella cheese, grated parmesan cheese, or some crumbled feta cheese would be delicious to add in.

How to make

Step 1: Blend your egg mixture

Preheat oven to 350F. Cook ground sausage on the stove top breaking it into crumbles as it browns. Set aside and allow to cool slightly.

In a large mixing bowl, blend eggs, cottage cheese, garlic powder, onion powder, black pepper and salt in a blender or with an immersion blender (Images 1 & 2).

Step 2: Assemble the ingredients

Pour egg mixture from the large bowl into a greased or parchment lined 9×13 baking pan (Image 3). Stir in cooked ground sausage (Image 4), chopped spinach and cherry tomatoes (Image 5). Whisk until the mix ins are evenly spread throughout the baking dish (Image 6).

Step 3: Combine and Bake

Bake at 350F for 40-42 minutes. Check to make sure the eggs are cooked through by inserting a knife or toothpick into the middle. Adjust cook time as necessary. Allow to cool slightly before cutting it into servings and enjoying.

Garnish with chives or green onions. I like to serve it with hot sauce.

Storage, reheating and Freezing

Store leftovers in an airtight container in the fridge for up to 5 days. You can also freeze this egg bake for up to three months. To reheat, put in the microwave until warmed through.

Ingredients

  • 1 lb ground breakfast sausage I used turkey sausage

  • 1 cup quartered cherry tomatoes
