Cheeseburger Breakfast Casserole
A low carb breakfast casserole with all the flavor of a cheeseburger

- 12 eggs
- 1/2 lb ground beef
- 1/2 white onion diced
- Salt and pepper
- 1 1/2 cups cheddar cheese
- 1 tbsp avocado oil
- Spray avocado oil
Preheat oven to 400F
Pour avocado oil into a frying pan over medium-low heat
Add diced white onion to the pan and cook until soft and fragrant - about 3 minutes
Add 1/2 lb of ground beef to the pan, increase the heat to medium
Break the beef up into crumbles and season with salt and pepper
Continue cooking the beef and breaking up with a spatula until brown and crumbled
Remove the pan from the heat and set aside
Spray a 13x9 baking dish with avocado oil
Crack 12 eggs into the greased baking dish and whisk them together until fluffy
Pour beef and onion mixture into the baking dish with a spoon
Season with salt and pepper
Sprinkle cheddar cheese all over the top of the dish
Bake in the oven at 400F for 30 minutes
Remove from the oven and cut into 12 individual squares
