To make this recipe you will need some simple kitchen items starting with a 13×9 baking dish. Other than that grab a whisk, a frying pan, and a sharp knife. Before you get started cooking I highly recommend putting on your favorite podcast or playlist.
The ingredients you will need for this recipe are a dozen eggs, 1/2 lb of ground beef, 1/2 a yellow onion, and cheddar cheese. I use salt and pepper to season and avocado oil to cook. Be sure to spray your baking dish with avocado oil spray to grease it before you bake.
To make this cheeseburger breakfast casserole start by dicing 1/2 a yellow onion and cooking the onion in avocado oil in a frying pan over medium-low until soft and fragrant. Add the ground beef to the pan to brown and season with salt and pepper. Cook the ground beef over medium until cooked and set the onion and beef mixture to the side.
Spray a baking dish with avocado oil spray and crack 12 eggs directly into the pan. Whisk the eggs together and pour the onion and beef back into the pan. Spread the cheddar cheese on top and place in the oven.
Bake at 400F for 30 minutes and then slice it into 12 squares. Enjoy immediately or store in the refrigerator for up to 4 days. Reheat in the microwave or toaster oven. You can find the full recipe below and, as always, if you make this, please share with me in the comments or on Instagram!Print
