Preheat oven to 350F and grease a 9x13 casserole dish with spray oil
Heat the oil in a frying pan over medium-low heat and add the onion. Saute the onion until soft and fragrant - about 4 minutes.
Increase the heat to medium and add the ground turkey to the pan
Cook the ground turkey and break up into small crumbles until browned - about 6 minutes Add salt, pepper and garlic powder to the turkey and onions and saute for another minute
While the turkey cooks, scramble 12 eggs with the milk.
Add chopped tomatoes to the pan with the turkey and onions and cook for 2 more minutes. Remove the pan from the heat and pour the turkey and tomato mixture into the casserole dish.
Pour the egg and milk mixture into the casserole dish and stir. Sprinkle crumbled goat cheese over top and stir in gently. If desired, add thinly sliced tomato on the top of the casserole
Bake in the oven at 350F for 45 minutesÂ
Remove from the oven and allow to cool before slicing into squares
