Preheat oven to 350F and grease a 9x13 casserole dish with spray oil
Dice the yellow
Heat the oil in a frying pan over medium-low heat and add the onion
Saute the onion until soft and fragrant - about 4 minutes
Add salt, pepper and garlic powder to the onions and saute for another minute
Increase the heat to medium and add the ground turkey to the pan
Cook the ground turkey and break up into small crumbles until browned - about 6 minutes
While the turkey cooks crack 12 eggs directly into the casserole dish and scramble the eggs ** If you want to make the casserole fluffier and add more protein, blend the eggs with 1 cup cottage cheese before pouring into the casserole dish
Add chopped tomatoes to the pan with the turkey and onions and cook for 2 more minutes
Remove the pan from the heat and allow the mixture to cool slightly
Once cooled stir the turkey and tomato mixture into the eggs in the casserole dish
Sprinkle crumble goat cheese over top and stir in gently
If desired, add thinly sliced tomato on the top of the casserole
Bake in the oven at 350F for 45 minutesÂ
Remove from the oven and allow to cool before slicing into squares
