Serving suggestions

These browned butter rice crispy treats are great for kid friendly gatherings. They are nut free and something even the picky eaters will enjoy. I love making these alongside other fun kid desserts. On Easter, I make them along with this Easter Bunny cake. For other events, I pair it with some monster cookies for a fun spin on chocolate chip cookies, or brownie bites.

If you’re looking for a kid friendly main course, I love making chicken nuggets or chicken tenders with some air fryer french fries.

Ingredients

  • Salted Butter – I like using salted butter for brown butter because I find I get better results than unsalted
  • Mini marshmallows – I recommend mini marshmallows so they melt quickly to avoid clumping. I use a 10-ounce bag
  • Crispy rice cereal – the base of your rice krispie treat! You can use any brand of rice krispies cereal you prefer

Ingredient Substitutions

You can make brown butter with unsalted butter, but if you do, I would add a pinch of kosher salt to your rice krispie treats to bring out all of the flavors.

You can adjust the ratio of ingredients to your taste if needed, but for me this ratio is the perfect balance of crunch and sweetness.

Marshmallow fluff could also work in place of the mini marshmallows. I just recommend avoiding large marshmallows because they are much harder to melt properly. You can also try this with vegan marshmallows, but the texture might change when melting.

For gluten-free treats, make sure to get both gluten free rice crispy cereal and marshmallows.

You could also add a tsp vanilla extract or vanilla bean paste for extra flavor. Chocolate chips would also be a fun addition. If you like a little salt on your baked goods, sprinkle with flaky sea salt.

How to make

Step 1: Brown the butter & add marshmallows

Grease or line an 8×8 baking dish. You could also make thinner treats on a rimmed sheet pan.

Prepare the brown butter. Place a stick of salted butter in a large pot over low to medium heat. Allow the butter to melt completely. Whisk occasionally until the top of the melted butter looks foamy. Once it has that foam, whisk constantly until you start to see small brown flecks at the bottom of the pan and immediately reduce the heat to low (Image 1). You should smell a toasty, nutty aroma.

Pour in the 10-ounce of mini marshmallows (Image 2) and stir constantly until the marshmallows are completely melted (Image 3). Turn off heat and pour the cereal (Image 4) in the saucepan. Stir quickly with a spatula and mix until cereal is evenly coated in the marshmallow mixture.

Step 2: Pour into pan and cool

Pour into the prepared pan and press down into an even layer. It may be helpful to use a piece of parchment paper for this step. Allow to harden completely before cutting into squares or rectangles.

Storage and Freezing

Once prepared, store these brown butter rice krispie treats on the counter at room temperature for up to 4 days.

To keep them longer, freeze the treats in an airtight container or wrapped in wax paper and then plastic wrap or foil for up to 3 months. Thaw and enjoy.

  • 1 stick salted butter – 8 tablespoons
  • 1 10oz bag mini marshmallows
