I did not believe the air fryer hype until I tried one for myself at my girlfriends house. She has a combo cuisanart air fryer and toaster oven. This thing is seriously amazing and has changed the way I view reheating items.
The air fryer I use is large and quite pricey so if you are looking for a more affordable option I have heard wonderful things about this Ninja air fryer. Of course, if you have no plans to purchase an air fryer now or ever, your can use a normal oven. If you are baking these in an oven, follow all of the instructions up until air frying and bake them in a 400F oven for 25 minutes.
If you are on the fence about an air fryer, maybe I can convince you to buy one by saying my enjoyment of many of my favorite foods has been elevated by making them in an air fryer. This includes brussels sprouts, chicken thighs and Traders Joe’s cauliflower gnocchi.
The next question you might be asking yourself about these low carb air fryer chicken nuggets might be, “you’re breading them with what!?!” Before you get all weirded out that I have decided to bread my nuggets with pork rinds all I can say is don’t knock it until you’ve tried it.
If you have ever done a Whole30 or tried a paleo diet you know how common it is for people to try to bread items with almond flour and I am here to tell you that pork rinds are a superior choice for MANY reasons. High on my list of reasons is the crunch factor.
These low carb air fryer chicken nuggets have that crunchy outside and juicy inside that you expect from a deep fried nugget. It is easier to bread with pork rinds than you might think. Just buy a bag of plain pork rinds – the ingredients on the bag should be as simple as: PORK SKIN, SALT.
Take 3oz of your pork rinds and place them in a food processor. Process them up until they resemble bread crumbs – this will only take a few seconds. Pour them onto a plate and you are ready to bread your nuggets!!
The only ingredients you will need to make these low carb air fryer chicken nuggets are boneless skinless chicken breasts, coconut flour, eggs, and some pork rinds. Cut your chicken into nugget shaped bites. Then process your pork rinds in a food processor until they are breading consistency.
Set a up a breading station with your chicken, coconut flour, scrambled eggs, and pork rind bread crumbs. Bread the nuggets by dipping in the coconut flour, then the egg wash and finally the pork breading. Place on an oiled air fryer tray and air fry at 400F for 12-15 minutes.
