Ingredients for this savory galette recipe
- 9″ pie crust – allow your pie dough to get to room temperature so it is easy to work with
- Shredded sharp cheddar cheese – I like the sharpness of the cheddar with the asparagus, but you can use any cheese here
- Asparagus – the asparagus makes this savory galette feel like Spring
- Olive oil – I use extra virgin olive oil, but you can use whatever oil you would like, or you can use melted butter or an egg wash
- Black pepper – the pepper adds a bit of flavor and spice to the asparagus
- Lemon Zest – the citrus from the lemon zest balances out the other flavors so well
- Flakey sea salt – make sure to use your flaky finishing salt. You want a delicate salt flakes that are gentler than table salt.
Ingredient substitutions
I used a store bought pie crust for this recipe, but you could also use a homemade crust. If you make your own, be sure to make it ahead of time and wrap in plastic wrap to chill for at least an hour. You can also use a pastry dough like puff pastry to make a fluffier crust.
Customize this vegetable galette by using any veggies you like! Add red pepper, caramelized onions, Swiss chard, whatever your heart desires. Asparagus is my favorite option but mixed sautéed mushrooms in a large skillet to make a mushroom galette. Garlic would be a great addition. At the height of the summer you can also use thinly sliced heirloom tomatoes for a tomato galette. In the winter, a butternut squash galette would be delicious.
If you do not need this galette to be vegetarian, some prosciutto would be so delicious.
I like to use grated sharp cheddar cheese as the base of this galette, but you could also use gruyere, feta cheese, brie cheese, ricotta cheese, or whipped goat cheese. You can even use a couple ounces of a few cheeses to create your own mixture.
If you would like, add your favorite herb like fresh thyme or fresh basil, to garnish the galette when serving. A fun twist would be some hot honey on top too.
Simplify life with store-bought pie crust
Like I said, I keep this savory galette recipe SUPER simple by using a store bought crust. I like to buy 9″ pie crusts in the freezer section.
They come in packs of 2 so you can use one for this cheddar galette recipe and save one for later. If you want to make this recipe gluten free, just buy a gluten free crust!
How to make
Step 1: Prepare pie crust
If your pie crust is frozen, allow it to thaw completely. Then, preheat oven to 400F.
Next, sprinkle a light layer of flour onto a piece of parchment paper. Place 9″ crust on top and roll out with a rolling pin on the lightly floured surface until the crust is 12″ in diameter.
Step 2: Add fillings to center of savory galette
Then, place shredded cheddar cheese into the middle of the crust leaving about a 2-inch border of crust on all sides. Trim and slice asparagus stalks into 3 pieces.
Arrange asparagus pieces in an even layer on top of the cheddar cheese. Brush asparagus with olive oil using a food brush.
Step 3: Fold galette crust and bake
Next, season with fresh cracked black pepper. Fold the crust by folding small sections of the outside over the filling. Repeat this process making overlapping folds until all of the crust is folded.
Finally, brush the outside of the crust with a little olive oil and season with a small amount of flakey sea salt. Place on a parchment lined baking sheet and bake the galette at 400F for 30 minutes until golden-brown.
Step 4: Cool, slice and enjoy!
Remove from the oven and top with lemon zest. Allow the galette to cool slightly and then slice into 6 even slices and enjoy!

Storage and reheating
This galette is best if enjoyed immediately, but you can store it in the fridge for up to 5 days. Reheat in the oven or toaster oven until warmed through. You can freeze your savory galette for up to 4 months and reheat in the oven.

This galette was the first thing I made in my oven after 2 weeks of microwave cooking due to a gas leak in my apartment. I served it with steak & salad.
