Make a healthy dinner in less than 30 minutes with this Air Fryer Salmon and Veggies recipe. Just toss salmon and broccoli in a simple marinade to season and then air fry!

A Quick but well balanced Easy dinner

I really love my air fryer and I really love an easy dinner. This air fryer salmon and vegetables comes together quickly, tastes amazing, and will fill you right up!

It requires minimal hands on work which makes it great for hectic or tired evenings. I like making salmon in the air fryer because it gives it that perfect crispy outside while maintaining a soft inside. T

he broccoli, or whatever vegetables you choose to use, also get nice and crispy which we all love. You can also pair this with all sorts of different sides!

Add this air fryer salmon recipe to your meal prep rotation. Enjoy one serving immediately and eat the other one for lunch the next day!

serving Suggestions

This broccoli and salmon in the air fryer recipe is great because there are so many different serving options! I typically eat this dish with rice.

Any grain would be great though, including quinoa, barley, farro, you name it. You could leave the grain out and just eat it as is if you’re doing Keto, too!

A side of roasted potatoes would be great, or even just more vegetables. You can even serve it with something more filling like this quinoa chickpea salad.

Recipe Ingredients

  • Salmon fillets
  • Broccoli florets
  • Dijon mustard
  • Maple syrup
  • Lemon juice
  • Olive oil
  • Soy sauce
  • Salt
  • Pepper

ingredient substitutions

Make this air fryer salmon gluten free by using tamari or coconut aminos in place of the soy sauce.

You can also substitute whatever vegetable you’d like here. Any cruciferous vegetable like cauliflower or brussels sprouts would be great.

Quartered tiny potatoes may work, though they may require a bit more time than the salmon so be mindful of that!

I like to season this air fried salmon simply with salt and pepper, but you can really up the flavor with different seasoning blends. One I like to do frequently is a mix of garlic powder, smoked paprika and salt.

How to make air Fryer Salmon and Veggies

Step 1: Prepare marinade

To begin, whisk together the dijon mustard, maple syrup, lemon juice, olive oil, and soy sauce. Whisk until a smooth even mixture remains.

Brush a generous layer of the marinade over the salmon. Then, toss the broccoli florets in the remaining marinade.

Step 2: Place in the Air Fryer and season

Next, place the salmon in a greased air fryer basket with the skin side down. Then, arrange the broccoli on the air fryer tray around the salmon.

Season both the salmon and the broccoli with salt and pepper or any seasonings you like.Then, place in a preheated air fryer at 400 F. Cook for 6 minutes, then toss the broccoli.

Continue cooking for another 6-8 minutes, until internal temperature of the salmon is at least 145 F. Be sure to check the salmon temperature at the thickest part of the fillet.

Serve immediately with choice of extra side! I like it with a simple side of white rice.

Storage and reheating

This dish is best served fresh and immediately, but it can be kept in an airtight container in the fridge for 2-3 days.

Simply reheat in the air fryer for a few minutes until warmed through.

Ingredients

  • 2 fillets of salmon
  • 8oz of broccoli florets
  • 2 tbsp dijon mustard
  • 1 tbsp maple syrup
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp soy sauce
  • Salt and pepper

Instructions

  1. Whisk together dijon mustard, maple syrup, lemon juice and soy sauce. Brush a generous layer of the marinade over the salmon with a basting brush.
  2. Toss the broccoli in the remaining marinade. Arrange the salmon and broccoli on an air fryer tray and season the salmon and broccoli with salt and pepper.
  3. Preheat air fryer to 400F. Cook salmon and broccoli for 6 minutes then toss the broccoli. Continue cooking salmon and broccoli for 6-8 more minutes or until the internal temperature of the salmon reaches 145F. Serve immediately

    I haven’t tried this but the idea sounds good enough to put it in my lineup. I’m going to have to recalculate the nutritional info before I try it though, a days worth of sodium and 92 grams of protein per serving does not sound right.

      Hey Chip, Thanks for calling that out. Unfortunately the nutrition calculators that work well with blogs and the google gods don’t always give teh most accurate info. trust me when I say it really really bothers me. If you are tracking nutrition cloesly I always advise calculating in an app on your phone. Thanks!

    LOVED THIS! I left out the soy sauce due to an allergy, but I think it was still amazing! Adding to the weekly meal plan.

    Please note: I challenged my 12 year old to try a bite AND SHE LIKED IT! She is a Mac and cheese/bagel/sandwich kid.
