This Tater Tot Taco Casserole has a delicious and filling taco base toped with melty cheese and crispy tater tots. It is perfect for a weeknight meal or a fun dish to serve at your next party! It comes together in just 30 minutes and is a total crowd pleaser.

I like to serve this with creamy black bean and corn dip as an appetizer!

  • Ground beef: I like using ground beef for this recipe, but you could do ground chicken or ground turkey too
  • Taco seasoning: I like to grab a packet of taco seasoning to make it easy, but you can make your own homemade taco seasoning too
  • Black beans: beans add some extra protein and fiber to the casserole
  • Cheddar cheese: feel free to grate your own cheese or keep it easy with a bag of pre-shredded cheese
  • Frozen tater tots: use your favorite brand of tater tots for this recipe

For some extra vegetables, you could add diced bell peppers. Green chiles would also be great. You could also try making this with red enchilada sauce instead of taco seasoning mix.

Step 1: Preheat oven to 350F. Brown ground beef in an oven safe skillet over medium heat.

Step 2: Pour in the taco seasoning, tomatoes, black beans and corn. Stir and simmer.

Mad’s Expert Tips for the Best Taco Tater tot Casserole 🥔

  • Drain the corn and black beans – before adding them to the dish, make sure to drain and rinse you black beans and corn. This will help make sure your casserole doesn’t get too liquidy.
  • Don’t overcook your ground beef – because this casserole goes into the oven to bake, you just need to brown the beef on the stove, but it does not need to be fully cooked
  • Arrange your tater tots in a single layer – keep your tater tots in a single layer to make sure they get perfectly crispy in the oven

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 15oz can petite diced fire roasted tomatoes
  • 1 15oz can black beans
  • 1 cup corn kernels fresh or frozen
  • 1.5 cups shredded cheddar cheese
  • 4-6 cups frozen tater tots
  • Salsa, guacamole, sour cream and lettuce for topping

Instructions

  • Preheat oven to 350F. Brown ground beef in an oven safe skillet over medium heat.
  • Pour in the taco seasoning, tomatoes, black beans and corn. Stir and simmer for 5 minutes.
  • Remove from heat and top with shredded cheese. Arrange tater tots on top.
  • Place in oven and bake at 350F for 20 minutes.
  • Top with your favorite taco toppings.

    Appreciated how easy it was to make this! Such a nice twist on tacos and makes for perfect comfort food. We added some of our favorite taco sauce on top for extra fun. Would definitely make it again.

    This is so good! It’s one of those “this is so good why didn’t I think of it” meals. Pretty quick and all in one pan. I am dairy free so I swapped the cheese for vegan cheese and then I used vegan yogurt for the sour cream and it was great. we chowed down on this one.
