Sheet Pan Pineapple Chicken is a delicious one pan meal. To make this simple baked pineapple chicken just prep your ingredients and pop the pan in the oven.

Serving Suggestions

This sheet pan pineapple chicken is delicious over some rice or cauliflower rice. I love to add some green onions or sesame seeds on top too.

For some extra easy greens on the side, you could make some air fryer asparagus or air fryer brussels sprouts.

Ingredients and Substitutions

  • Boneless skinless chicken breasts – you can use chicken tenderloins or boneless chicken thighs instead
  • Bell pepper – I love the addition of bell pepper with pineapple
  • Yellow onion – onion adds great flavor to your sheet pan meal
  • Pineapple chunks in pineapple juice – make sure to use canned for this recipe to avoid your chicken getting mushy
  • Low sodium soy sauce – I prefer low sodium to avoid getting the dish too salty
  • Rice vinegar – you can also use white wine vinegar if you don’t have rice vinegar
  • Sriracha – feel free to add extra for additional heat
  • Sesame oil – sesame oil adds a ton of great flavor to your sauce
  • Garlic powder and kosher salt – a simple spice blend completes the flavors in your sauce

How to Make

Step 1: Prep your ingredients and sauce

Preheat oven to 350F and grease a baking sheet.

Cut the chicken into bite size pieces and place in a mixing bowl. Cut the pepper and onion into similar sized pieces and place in the bowl. Add the pineapple.

In a small bowl, whisk together the soy sauce, rice vinegar, sriracha, sesame oil, garlic powder, and kosher salt. Pour over the chicken, bell pepper, pineapple, and yellow onion and toss.

Step 2: Bake and Enjoy

Pour the contents of the mixing bowl onto the greased baking sheet and place in the oven. Bake at 350F for 15 minutes.

After 15 minutes, remove from the oven, toss the contents and bake in the oven for 7 minutes. Increase the heat to 425F once you’ve set the timer.

Remove from the oven, allow to cool slightly and serve.

Storage and Reheating

Once cooked, keep this sheet pan pineapple chicken in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop over medium low heat or in the microwave.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 bell pepper
  • 1 yellow onion
  • 20 oz diced pineapple chunks in juice (do not use fresh)
  • ¼ cup low sodium soy sauce
  • 1 tbsp rice vinegar
  • 2 tsp sriracha
  • 2 tsp sesame oil
  • 1 tsp garlic powder
  • ½ tsp kosher salt

  • Preheat oven to 350F and grease a baking sheet.

  • Pour the contents of the mixing bowl onto the greased baking sheet and place in the oven. Bake at 350F for 15 minutes.

    We made this tonight! Like COME ON! Pretty much pantry ingredients (sub soy sauce for coconut aminos if you need to). Amazingly seasoned. One sheet Pan. Came together in less than 45 mins. This is a KEEPER! A monthly rotation. Yum yum yum!
