Use this Oven Baked Starbucks Egg Bites recipe for sous vide style egg bites in the oven. Skip the drive through, save money and make 12 delicious egg bites at home My secret trick is to create a steam bath in the oven so the egg bites get extra fluffy!

I like my bacon to be extra crispy before I bake it into these bites, so I usually use this crispy baked bacon method.

Make the fluffy sous vide Starbucks egg bites at home in your oven!

Do you love the bacon and gruyere Starbucks egg bites? I do too, but I was sick of paying their expensive prices and wasting my time in the drive through.

I realized I could make a batch of 12 in my oven for as low as $10! Thats just $1.67 per serving instead of the $5.25 or more you pay at Starbucks. Save yourself at least $3.58 a day and make these fluffy egg bites at home!

I knew I could make them at home for cheaper, but I needed to figure out how to get them smooth and fluffy. After some testing, I realized that if I blended eggs with cottage cheese and then steamed the egg bites in my oven, they turned out perfectly rich and fluffy.

Mad’s Expert Tips for the Best copycat Starbucks Egg Bites 🍳🥓

  • Use steam from a water bath to make them extra fluffy – Starbucks makes their bacon and gruyère egg bites in a sous vide machine. You can get that fluffy and creamy texture in muffin cups by creating a steam bath in your oven. Carefully pour boiling water onto a rimmed baking sheet in your preheated oven before placing the muffin pan in the oven to bake the egg bites.
  • Generously grease muffin pan or use silicone liners – the combination of blended eggs and cottage cheese can be very sticky. Be sure to grease the muffin pan with a generous amount of cooking spray or (my favorite method) line each cup with a silicone liner.
  • Blend fully for a velvety texture – it may be tempting to skip the step of blending the cottage cheese and eggs, but for that custardy texture that you know and love, be sure to blend the combination of eggs and dairy fully. To save myself time during cleanup, I will use a handheld immersion blender.

I also use this same blended cottage cheese and egg method to make this fluffy cottage cheese egg bake! Another great recipe that is ideal for busy mornings.

Ingredients You’ll Need

You need just a few simple ingredients to make restaurant quality egg bites at home! I have listed some information about the ingredients below, but you can find detailed amounts in the recipe card.

  • Eggs or egg whites: I personally like the texture of whole eggs better, but you can substitute 9 whole eggs for 2 cups of egg whites and follow the rest of the instructions to make egg white bites.
  • Cottage cheese: for a creamier texture I recommend using full fat cottage cheese. Fat free cottage cheese can result in a watery egg bite.
  • Salt: add just a pinch of kosher salt to the egg and cottage cheese mixture to enhance the flavor. Feel free to add any other dry seasonings to the batter at this point. I have added things like garlic powder, onion powder and smoked paprika to enhance the flavor of these homemade egg bites.
  • Bacon: I like to add cooked pork bacon to these cottage cheese egg bites, but you can use any breakfast meat you like. I sometimes use turkey bacon or turkey sausage links cut into bite sized pieces.
  • Shredded gruyere cheese: I usually use gruyere or a swiss cheese and gruyere cheese blend, but you can basically use any cheese you have on hand like mozzarella, monterey jack or sharp cheddar cheese.

You cannot taste the cottage cheese once it is blended into the batter, but if you aren’t a fan of cottage cheese you can use an 8 oz brick of cream cheese instead of the cottage cheese for this baked egg bite recipe.

If you want to make vegetarian egg bites, skip the breakfast meat and mix in some finely chopped vegetables. I like to use chopped baby spinach, thinly sliced green onions or lightly steamed chipped broccoli.

Baked Egg Bite Variations

My favorite flavor of the Starbucks egg bites are the bacon and gruyere sous vide egg bites so I usually make those, but there are so many other egg bite flavor combinations you can make for an easy breakfast!

  • Roasted red pepper and feta – mix chopped jarred red bell pepper and crumbled feta cheese in with the egg custard. I also like to mix a bit of hot sauce in with this one.
  • Broccoli cheddar – mix chopped par boiled broccoli and shredded sharp cheddar in with the egg mixture.
  • Spinach, tomato, and goat cheese – This is one of my favorites! I add fresh chopped spinach, diced tomatoes and crumbled goat cheese. It is also great with a bit of crumbled Italian sausage.
  • Mushroom and herb – saute mushrooms and season with herbs before placing in the muffin pan. This one is also delicious with any type of cheese!

How to make Oven Baked Starbucks Egg Bites 🍳🥓

Step 1: Preheat oven and grease or line a muffin pan. Cook bacon or whichever breakfast meat you are using. Blend eggs, cottage cheese and salt together with a blender or immersion blender.

Step 2: Place cooked bacon pieces and gruyere cheese in prepared muffin pan. Place an even amount in each slot.

Step 3: Pour the cottage cheese and egg mixture over the bacon and cheese. Use a toothpick to gently stir every bite.

Step 4: To make the egg bites extra fluffy, prepare a steam bath in the oven by placing a sheet pan of warm water on the rack under the muffin pan. Bake egg bites in the oven at 350 until fluffy and cooked through.

Storage and reheating for Starbucks Bacon and Gruyere Egg Bites

Allow egg bites to cool completely then transfer to an airtight container in the refrigerator. Store in the fridge for up to 5 days. Reheat in an air fryer at 325F for 5 minutes or microwave for 2 minutes. If I microwave them, I like to crisp the top under the broiler in the oven until golden brown.

Ingredients

  • 9 large eggs or 2 cups egg whites
  • 1 1/2 cups cottage cheese or 8oz cream cheese
  • 1 tsp kosher salt
  • 6 strips cooked bacon
  • 2/3 cup shredded gruyere cheese

Instructions

  • Preheat oven to 350F and spray a 12 slot muffin tin with a spray oil. Add eggs, cottage cheese and salt to a blender. Blend until a smooth mixture remains.
  • Add 1/2 strip of bacon cut in half again to each of the muffin slots. Add the cheese to the muffin pan on top of the bacon. Pour the egg and cottage cheese mixture into the muffin pan, filling each pan evenly.
  • Carefully prepare the steam bath by placing a baking sheet on the bottom rack of the oven. Boil water on the stove top and carefully pour the boiling water onto the baking sheet. Place the muffin tin on the middle rack of the oven. ** Wear proper heat protective oven mitts while doing this
  • Close the oven and bake for 25 minutes. Remove the muffin tin from the oven. Turn off the heat and allow the baking sheet to cool before removing it from the oven. 
  • Allow the egg bites to cool slightly then remove from the muffin tin and enjoy!

Recipe Notes

  • Freezer Instructions: Allow egg bites to cool completely. Place in a freezer safe bag. Freeze for up to 3 months.
    • After thawing: microwave in a wet paper towel for 45 secs OR air fry / bake at 300F until warmed through about 5 mins in air fryer, 15 mins in oven.
    • From frozen: microwave in a wet paper towel for 3 mins on 75% power. OR microwave in a wet paper towel for 1 min and then air fry / bake at 300F until warmed through about 7 mins in air fryer, 20 mins in oven.

      Yes, you can! Just swap 2 cups of egg whites for the 9 full eggs and follow the rest of the instructions.

    Just made this recipe. These are really Very good and really easy. Mine stuck a little in the muffin tin, even though I sprayed it, but that’s no big deal. Hope they taste as good out of the freezer as they do right now. I’ll make these again

    I have made these numerous times now. So easy and versatile. You can play around with the added ingredients. I just did fresh spinach chopped fine, turkey sausage crumbles and gruyere. I do add some garlic powder to my liquid with S&P. Highly recommend. It’s a fantastic make ahead on Sunday recipe to eat quickly throughout the week for a grab and go breakfast.

    This recipe has been my GO-TO for breakfast for like the past three months, it’s seriously so good! And versatile. I prefer sausage to bacon and it still turns out really well. This past week I mixed in some lentils with the sausage to help up my fiber intake and these are still so good.

    Tip: if you use silicone muffin pans, add 10 minutes to the bake time and they turn out perfect! We had user error the first time and they weren’t cooked through enough haha

    These have become a staple in our house.
    Instead of muffin pan I use a silicone tray.
    We make them every week and put in a whole wheat wrap from Aldi! Great filling breakfast
