The only thing better than some homemade meatballs are mozzarella cheese stuffed meatballs. These chicken meatballs are moist, delicious, loaded with flavor and stuffed with gooey, stringy cheese.
Just roll up chicken meatballs and stuff them with cubes of part skim mozzarella cheese. Then, brown the mozzarella stuffed meatballs on the stovetop and finish in the oven.

- Egg
- Almond flour
- Salt and pepper
- Oregano
- Crushed red pepper
- Garlic powder
- Part skim mozzarella cheese
- Marinara sauce
What kind of cheese is best for stuffed meatballs?
I used part skim mozzarella cheese for these meatballs. It is easy to cut into cubes and will not melt too quickly when the meatballs are cooked.
How to make Mozzarella Stuffed Chicken Meatballs
Step 1: Prepare mozzarella stuffed meatballs
To begin, preheat oven to 350F. Add ground chicken, egg, almond flour, salt, pepper, oregano, garlic powder, and crushed red pepper to a mixing bowl.
Then, mix to combine thoroughly with a spoon or your hands. With wet hands, roll out 8 meatballs using about 2 tbsp of mixture for each meatball.
Place meatballs on a tray and cut part skim mozzarella into cubes. Stuff each meatball with a piece of mozzarella.
Step 2: Brown stuffed meatballs and bake
Then, heat oil in a cast iron skillet. Place the meatballs in the skillet and cook for about 8 minutes until the meatballs are browned on all sides.
Place cast iron skillet in the oven to bake at 350 for 13 minutes.
Step 3: Add sauce, heat, and serve
Finally, take the meatballs out of the oven and pour the sauce into the cast iron. Heat the sauce and meatballs over medium-low heat until the sauce is warmed through.
Serve meatballs with fresh parmesan cheese on pasta.
How to store and reheat these cheese stuffed meatballs
Store the cooked chicken meatballs in an airtight container in the fridge for up to 4 days. Reheat on the stove top in marinara sauce over medium-low heat.
