For a smaller dinner party, I like to make a pasta, like baked feta and broccoli pasta, paired with a protein like panko chicken or grilled flank steak. Then I serve the cobbler for dessert.
At a larger party, I opt for a variety of appetizers to feed everyone. These cheesesteak sliders, buffalo chicken bites, and stuffed mushroom dip are all great options to fill the table.
Ingredients
- Mixed berries – You can use any combination of berries that you love. I used strawberries, blueberries, raspberries, and blackberries. They can be fresh berries or frozen if berries are out of season.
- Sugar – use white sugar to add sweetness and caramelize the fruit as it bakes
- Cornstarch – the cornstarch helps thicken the juices from the fruit
- Flour – the base of your cobbler topping
- Sugar – the sugar in the topping sweetens the cobbler crumbles and caramelizes it
- Salt – a little salt enhances all of the flavors in the cobbler
- Butter – use unsalted butter here to control the amount of salt that is added to your berry cobbler
Ingredient Substitutions
For this berry cobbler, you can use any combination of berries you like. Feel free to mix it up and try different combinations. For a bit more zest in your cobbler, add some fresh lemon juice or lemon zest.
To make this cobbler gluten free, use a gluten free flour in place of the all purpose flour.
If you prefer a thicker, syrupy cobbler, add two tablespoons cornstarch instead of one to thicken the juices.
I created more of a streusel topping for this recipe, but if you would like, you can also add some oats. To make it more of a buttermilk biscuit topping, you could add baking powder and use cold butter to fold it into your dough. Then cut it into crumbles with a pastry cutter. This method adds some steps but it is tasty.
How to make
Step 1: mix Berries and sugar
Preheat oven to 375F and grease a square baking pan, pie plate or oven safe skillet. Mix berries, cornstarch, and sugar together in a medium bowl (Image 1) and set aside while you make the cobbler topping (Image 2).
Step 2: Make the flour mixture
Whisk the flour, sugar and salt together in a separate bowl (Image 3). Pour butter into bowl and stir in with a flat spatula (Image 4).
Step 3: Add topping and bake
Pour the berry mixture into the prepared pan and sprinkle the cobbler topping over it (Image 5). Bake at 375F for 35-38 minutes – you want the crust to be golden brown and filling bubbling (Image 6). Allow to cool for about 10 minutes before serving with ice cream.
Prep ahead of time
Looking to prepare this fresh summer dessert in advance? Take just 10 minutes to assemble the cobbler in a pie plate or casserole dish. Cover with plastic wrap and place in the fridge for up to 12 hours. Bake directly from the fridge for an extra 3-5 minutes and serve warm!
Storage and reheating
Allow the cobbler to cool completely, then transfer to an airtight container and store in the fridge for up to 5 days. Reheat in the microwave or in the oven until warmed through.

- 1 tbsp sugar
- 1 tbsp cornstarch

- 1 stick (8 tablespoons) unsalted butter – melted and cooled slightly

- Pour the berry filling into the baking dish and top with dollops of the cobbler. Bake at 375F for 35-38 minutes – you want the crust to be golden brown and filling bubbling. Allow to cool for about 10 minutes before serving with ice cream.
