These Fudgy Brownie Bites are everything you love about a classic homemade brownie but in a fun bite-sized package. They are made from scratch with simple ingredients and baked in a mini muffin pan for perfect little portions every time.

Each one has that beautiful crinkly top and a rich fudgy center that is so much better than anything from a box. They are great for parties, kids, or just when you want a little something sweet! I like to make mini brownie cupcakes with some brown butter cream cheese frosting on top.

  • Semi sweet chocolate bar – Or you can use semi-sweet chocolate chips
  • Butter – butter adds the right level of moisture to these delicious bites
  • Large eggs – to help bind the ingredients together
  • Sugar – use white sugar to sweeten your brownie batter
  • Vanilla extract – the vanilla deepens the flavors in your fudgy brownie bites
  • Unsweetened cocoa powder – use good quality cocoa powder. The chocolate flavor in this recipe comes mostly from the cocoa powder so using a good quality one makes a big difference.
  • All purpose flour – use flour as the base for your brownie batter. You can also make this recipe gluten free but substituting a one to one gluten free flour

How to make Fudgy Brownie Bites

Step 1: Add eggs and sugar to a large mixing bowl and mix with an electric mixer until evenly combined, light and fluffy, about 3 minutes

Step 2: Chop a chocolate bar into chunks, melt with butter, and mix until evenly combined. Pour chocolate and butter mixture into the eggs and sugar along with the vanilla extract. Mix again.

Step 3: Add cocoa powder, flour, and salt to the bowl.

Step 4: Mix until the dry ingredients are just folded in.

Step 5: Grease a mini muffin tin very well (or use paper liners). Brownie batter is sticky and can be hard to remove if the pan is not well prepared. Add 2 tbsp of batter to each of 24 muffin slots.

Step 6: Place in the oven and bake. Brownie bites can overbake quickly in a mini muffin pan, so pull them out when the edges look set but the center still looks slightly underdone. They will continue to cook and firm up as they cool. Allow them to cool completely before removing from the tin.

Mad’s Expert Tips for the Best Fudgy Brownie Bites 🍫

  •  Do not overbake. Brownie bites cook fast in a mini muffin pan. Pull them out when the edges look set and the center still looks a little soft. They will firm up as they cool.
  • Grease the pan really well. Use cooking spray or butter in every cup and get into the edges. Brownie batter is sticky and will stick if the pan is not well coated.
  • Let them cool in the pan. Give the brownie bites at least 10 minutes to cool in the pan before trying to remove them. They are very soft when hot and will fall apart if you rush it.
  • Use good quality cocoa powder. The chocolate flavor in this recipe comes mostly from the cocoa powder so using a good quality one makes a big difference.

Fudgy Brownie Bites

Brownies from scratch in a smaller package! Make these delicious fudgy brownie bites with simple ingredients.

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 4 oz semi sweet chocolate bar
  • 8 tbsp unsalted butter
  • 2 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup all purpose flour
  • 1/4 tsp salt

Instructions

  • ***I recommend baking these in a silicone muffin pan or with greased mini muffin liners to prevent sticking***
  • Preheat oven to 350F. Add eggs and sugar to a large mixing bowl and mix with an electric mixer. Mix until light and fluffy – about 2 minutes.
  • Chop chocolate bar into chunks and melt with butter in the microwave or over a double boiler. Only warm until the butter is just melted. Mix until evenly combined and pour chocolate and butter mixture into the eggs and sugar along with the vanilla extract. Mix again with the electric mixer.
  • Add cocoa powder, flour, and salt to the bowl and fold in with a spatula. Mix until the dry ingredients are just folded in.
  • Grease a mini muffin pan (or use muffin lines) and add 1-2 tbsp of batter to each of 24 muffin slots – be careful to only fill the cups 2/3 of the way. Place in the oven and bake at 350F for 15-17 minutes.
  • Remove from the oven and allow to cool COMPLETELY before removing from the muffin pan. Removing from the pan prior to cooling may make them crumble.

    Absolutely amazing! Could not believe how easy and quick they were to make and how fudgy and delicious!! I’ll never make boxed brownies again. I made 3 batches in 2 weeks. Kids and adults loved them. I made mine in a mini silicon muffin tin and really had to let them cool completely (hours) to avoid sticking! Iced them and put rainbow sprinkles on for a special birthday treat! Thanks for a great recipe!!

    Mine sunk in the middle and are hard to remove from the prepared pan. I see other recipes with baking powder. Would that help?

      Hmm. The sinking could be tied to under baking. Did you test with a toothpick? The sticking may have happened if the pan wasn’t greased enough or if you tried to remove before they were cool. I hope this helps!
