This chicken and broccoli alfredo recipe is perfect on its own because it has protein and vegetables in one dish. If you want to serve it with some bread, you could make this overnight bread or some tomato focaccia.

If you would like additional greens, make a quick salad with this creamy balsamic vinaigrette.

Ingredients and Ingredient Substitutions

  • Cottage cheese – it gives the perfect consistency to the sauce and adds protein
  • Whole milk – I used whole milk, but you could use heavy cream or half and half
  • Parmesan cheese – I like to freshly grate my own but you can also use store-bought
  • Garlic – feel free to increase the amount if you prefer more garlic
  • Pasta – use your favorite pasta shape for this recipe
  • Chopped broccoli – I like to buy the pre-chopped broccoli to keep it easy
  • Boneless skinless chicken breasts – you could also use chicken thighs
  • Garlic powder, onion powder, kosher salt, black pepper – this simple spice blend adds the perfect flavor to your chicken
  • Olive oil – I used olive oil but you can use any neutral oil

How to make

Step 1: Season Chicken and Boil Pasta

Blend cottage cheese, whole milk, grated parmesan cheese and garlic cloves to create a sauce (Image 1).

Boil pasta in salted water. When there is only 3 minutes left on the cook time, add the chopped broccoli. Drain the cooked pasta and broccoli together and set aside.

Step 2: Cook Chicken

While the pasta boils, cut chicken into small bite sized strips. Season with the garlic powder, onion powder, salt and pepper (Image 2). 

Heat oil in a large skillet over medium heat. Add seasoned chicken. Cook until browned and cooked through (Image 3).

Step 2: Assemble Pasta

Add pasta, broccoli and cheese sauce to the skillet with the chicken (Image 4 and 5). Reduce heat to med-low. Toss to combine everything and let saute for 2 minutes for the flavors to combine (Image 6).

Serve immediately with extra grated parmesan cheese.

Storage, reheating and Freezing

Store leftovers in an airtight container in the fridge for up to 5 days. To reheat, put the chicken and broccoli alfredo in the microwave or on the stovetop until warmed through.

Ingredients

  • 1 cup cottage cheese
  • 1 cup whole milk
  • ½ cup grated parmesan cheese + more for topping
  • 2 cloves garlic
  • 8 oz pasta
  • 12 oz chopped broccoli
  • 1.5 lb boneless skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

  • Boil pasta in salted water according to package instructions. When there is only 3 minutes left on the cook time, add the chopped broccoli into the boiling water. Drain the cooked pasta and broccoli together and set aside.

  • Heat oil in a large skillet over medium heat. Add seasoned chicken to the warm oil. Cook until browned and cooked through – 5-7 minutes.
  • Add pasta, broccoli and cheese sauce to the skillet with the chicken. Reduce heat to med-low. Toss to combine everything and let saute for 2 minutes for the flavors to combine.
  • Serve immediately with extra grated parmesan cheese.
