This Twice Baked Potato Casserole recipe makes it even easier to enjoy and share the delicious flavors of a twice baked potato. Mix all of your ingredients and bake in the oven for a rich and flavorful side dish.

  • Russet potatoes – The star of the show; I always recommend russet potatoes because they come out light and fluffy. For a denser, more rich potato texture, you can use yukon gold potatoes.
  • Milk, sour cream, melted butter – Mix these three together for the delicious potato filling
  • Shredded cheddar cheese – I like using orange cheddar for the look it gives the casserole, but you can use white cheddar, too
  • Bacon – I like using pork bacon, but you could also use turkey bacon. Be sure to cook bacon until crispy for that crunch you know from a baked potato topped with bacon bits!
  • Fresh chives – these add an extra pop of flavor to this recipe. I season the smashed potatoes with salt and onion powder, but you can also add garlic powder and black pepper for a more intense flavor.

How to Make A Twice Baked Potato Casserole

Step 1: Pierce potatoes with a fork and bake.

Step 2: Cut potatoes open and scoop potato flesh into a large bowl.

Step 3: Pour the melted butter, milk, sour cream, salt and onion powder into the bowl. Mix together with an electric hand mixer or a potato masher.

Step 4:  After you mash the other ingredients, fold in chopped chives with a flat spatula.

Step 5: Top the mashed potatoes in the baking dish with the cheese, crispy bacon and some more chives and place in a preheated oven to bake.

Mad’s Expert Tips for the Best Twice Baked Potato Casserole 🥔

  • Use Orange Cheddar – Orange cheddar gives this baked potato casserole dish a nice color. This is just my preference, so if you do not have orange cheddar, white cheddar will taste just as good!
  • Don’t over mix – Be careful to not overmix the potato mixture or it will get a gluey texture. Mix everything together lightly to keep the potatoes fluffy.
  • Add extra seasonings or mix ins to customize – This recipe is packed with flavor as is but feel free to try other seasonings or cheeses to customize the flavors!

Is it better to bake a potato at 350 or 400?

To get a crispy skin and fluffy interior, I recommend baking at 400 for 50 minutes.

Why is it called a twice baked potato?

A twice-baked potato is named for the cooking process since it is baked twice. First, you bake the potatoes alone. Then, you take the filling out, combine it with other ingredients, place it back in the potato and then bake again. The process is slightly different for this recipe though since it is a casserole!

How long do I put twice-baked potatoes in for?

First, you cook the potatoes by themselves for 50 minutes at 400 degrees. Then you cook the casserole for 20-25 minutes at 350 degrees.

Storage of Twice Baked Potato Casserole

Allow the twice baked potato casserole to cool completely and then transfer any leftovers to an airtight container. Place in the fridge and store in the refrigerator for up to 4 days.

Reheat in the oven or in the microwave until just warmed through. Top with fresh herbs and serve.

This recipe also freezes perfectly. Transfer to a freezer safe container after cooling and freeze for up to 3 months. To keep it in the same pan, wrap it in plastic wrap and foil to make it airtight. Thaw one day before you would like to eat, and heat it in the oven.

Ingredients

  • 5 lbs russet potatoes
  • 1 stick salted butter
  • 1 cup whole milk
  • .5 cup sour cream
  • 2 tbsp finely chopped chives
  • 2 tsp kosher salt
  • 1 tsp onion powder
  • 4 oz shredded sharp cheddar cheese
  • 5 strips of bacon

Instructions

  • Preheat the oven to 400F and line a baking sheet with parchment paper or foil. Wash potatoes and pierce each one 4-5 times with a fork.
  • Place potatoes on the baking sheet and bake at 400F for 50 minutes.
  • Allow the potatoes to cool until they are easy to handle, but still warm. Cut potatoes open and scoop baked potato into a large mixing bowl. Pour the melted butter, milk, sour cream, salt and onion powder into the bowl.
  • Mix with an electric mixer hand mixer until evenly combined. Fold in chopped chives with a flat spatula.
  • Grease a 9×13 casserole dish and pour the potato mixture into it. Top with the shredded cheese, crispy chopped bacon and some more chives.
  • Bake at 350F for 20-25 minutes and serve immediately.
