This casserole is a full meal on its own, but I also love adding a simple green salad on the side with my Chipotle dressing.
Add any taco toppings that you like on top like salsa, guacamole, sour cream, avocado, shredded lettuce, pickled jalapeños and pickled onions. Basically anything you like on top of a taco you can have on this casserole.
For a party, you could serve this with other appetizer options like fried pickle dip, cheesesteak sliders, or some garlic hummus. I love to have an array of lighter and more substantial options so people can try a bunch of different things.

Ingredients
- Ground beef – I like using ground beef for this recipe, but you could do ground chicken or ground turkey too
- Taco seasoning – I like to grab a packet of taco seasoning to make it easy, but you can make your own homemade taco seasoning too
- Fire roasted tomatoes – canned fire roasted tomatoes add a bit more flavor and smokiness to the dish
- Black beans – beans add some extra protein and fiber to the casserole
- Corn kernels – you can use fresh or frozen for this recipe. If you use frozen, you could get fire roasted corn
- Cheddar cheese – feel free to grate your own cheese or keep it easy with a bag of pre-shredded cheese
- Frozen tater tots – use your favorite brand of tater tots for this recipe
- Salsa, guacamole, sour cream and lettuce – you can add any and all taco toppings that you love! These are my favorites to include.
Ingredient Substitutions
I like to use a sharp cheddar cheese for this recipe, but you could also do a taco blend, pepper jack, monterey jack, or mexican blend cheese instead. A bit of queso fresco sprinkled on top would also be so delicious.
Have fun making your own variations of this recipe. Feel free to add a bit of diced onion before sautéing the beef if you would like a little extra punch of flavor. For some extra vegetables, you could add diced bell peppers. Green chiles would also be great. You could also try making this with red enchilada sauce instead of taco seasoning mix.
I like to grab store-bought salsa and guacamole for toppings, but you can certainly make your own! Feel free to add cilantro, green onions and olives as extra toppings as well. Serve with hot sauce on the side.

How to make
Step 1: Brown the Beef and add ingredients
Preheat oven to 350F. Brown ground beef in an oven safe skillet over medium heat (Image 1).
Drain the black beans and corn. Pour in the taco seasoning, tomatoes, black beans and corn (Image 2). Stir and simmer for 5 minutes (Image 3).

Step 2: Assemble the casserole
Remove from heat and top the ground beef mixture with shredded cheese. Arrange tater tots on top in a single layer (Image 4).
Place in oven and bake at 350F for 20 minutes. Top with your favorite taco toppings.

Storage, reheating and Freezing
Store leftovers in an airtight container in the fridge for up to 5 days. To reheat, put the casserole in the microwave or oven until warmed through.
To freeze, place in a freezer safe container before baking and cover tightly. Bake directly from frozen covered at 325F for 1 hour.

Ingredients

- 1 packet taco seasoning
- 1 15oz can petite diced fire roasted tomatoes
- 1 15oz can black beans
- 1 cup corn kernels fresh or frozen
- 1.5 cups shredded cheddar cheese
- 4-6 cups frozen tater tots
- Salsa, guacamole, sour cream and lettuce for topping
Instructions
- Preheat oven to 350F. Brown ground beef in an oven safe skillet over medium heat.
