Serving suggestions

If you’re making this tater tot breakfast casserole for brunch, there are so many great options to serve alongside it. You could make some pumpkin challah french toast or banana muffins for a sweet option.

For another savory option, I love to make a spinach and feta quiche. Crispy bacon is always a favorite of mine to add on the side. If you want a fun coffee for your brunch, make a sugar cookie latte syrup to serve with your coffee!

For a high protein option, try these high protein sausage pancake muffins.

Ingredients

  • Ground breakfast sausage – I used pork, but you can use any meat you would like
  • Eggs – use a dozen eggs to make the egg layer in your casserole
  • Heavy cream – a bit of cream makes the eggs the perfect texture
  • Garlic powder, onion powder, black pepper – add this simple spice blend to add some extra flavor to your eggs
  • Shredded cheddar cheese – you can use pre-shredded cheese or grate your own
  • Frozen tater tots – use your favorite frozen tater tots to complete your casserole

Ingredient Substitutions

I like to use a sharp cheddar cheese for this recipe, but you could also do a taco blend, pepper jack, monterey jack, or mexican blend cheese instead.

I used ground pork, but you could use ground beef, ground chicken, or ground turkey sausage. If you want to make it vegetarian, you could use a veggie sausage.

I find that the salt from the sausage and the tater tots is plenty, but if you would like a bit more in your egg layer, you could add a half teaspoon of kosher salt.

You can also add some vegetables to your casserole. Spinach, broccoli or diced bell peppers would be great. Some fresh chives or parsley would also be great on top of your casserole.

How to make

Step 1: Brown the Sausage and Whisk Eggs

Preheat oven to 350F and grease a 9×13 baking dish. Heat a large skillet over medium heat. Add the ground sausage to the warm frying pan, brown and break into crumbles. Remove from heat once cooked through.

In a large bowl whisk large eggs, heavy cream, garlic powder, onion powder and black pepper together (Image 1).

Step 2: Assemble the casserole

Pour the cooked sausage into the baking dish (Image 2) and then the egg mixture. Mix the two together and then top with a layer of shredded cheese (Image 3).

Arrange the tater tots in an even layer on top of the other ingredients (Image 4). Bake at 350F for 70-75 minutes – be sure that the eggs in the middle of the casserole are fully set. Remove from the oven and cool slightly before cutting into slices.

Storage, reheating and Freezing

If you want to make this tater tot sausage breakfast casserole in advance just follow all steps up until baking. Cover with aluminum foil and place in the fridge overnight. In the morning just bake according to the recipe!

Store leftovers in an airtight container in the fridge for up to 5 days. To reheat, put the casserole in the microwave or oven until warmed through.

To freeze, place in a freezer safe container before baking and cover tightly. You do not need to thaw it. Bake the tater tot casserole directly from frozen covered at 325F for 1 hour.
