  • Save time and money – One of the best parts of the holiday season are the Starbucks holiday lattes, but they can be pretty pricey. Make Starbucks sugar cookie syrup at home so you can skip the drive through.
  • Make festive lattes at home – The Starbucks sugar cookie almond milk latte is a favorite of mine! It is made with a sugar cookie syrup that has a subtly sweet sugar cookie taste. I am so excited that I can make it at home now with this simple syrup.
  • Use it many different ways – This homemade syrup is not just for coffee or tea! Use it on ice cream, pancakes, and waffles as a festive flavor boost!

Other ways to use

I love to use this sugar cookie syrup in coffee of any kind, but I understand that not everyone is a coffee drinker so here are some other ways to use it!

  • Sweeten chai or english breakfast tea with a spoonful
  • Drizzle over the top of pancakes or waffles in place of maple syrup
  • Drizzle over vanilla bean ice cream and crumble sugar cookies over top to make a delicious sugar cookie sundae

ingredients

  • Coconut milk – I use organic coconut milk for this recipe. You could also use sweetened condensed milk in place of the coconut milk. This will make the syrup much sweeter so I use about half of the sugar if I do that.
  • Light brown sugar – You can use dark brown sugar, granulated sugar, or coconut sugar instead. Changing up the type of sugar will change the color of the syrup slightly
  • Vanilla extract – In my experience, the more the merrier with vanilla extract! I have also used vanilla bean paste for this syrup instead of vanilla extract.
  • Almond extract – Do not skip this! In my opinion, almond extract is what really gives it that nice cookie taste.
  • Butter extract – This is not a necessary ingredient, but the butter flavoring does add to the rich sugar cookie flavor that you get from real butter. Add just a splash of this to the syrup if you have it.
  • Salt – Adding just a pinch fo salt really enhances the flavor of this recipe.

I love to use this sugar cookie syrup to make a cold foam that I pour over cold brew! It is like a sweet cream, but even better!

  • 8oz cold brew
  • Ice
  • 1 tbsp sugar cookie syrup
  • 1/4 cup half and half

Fill a small glass with ice and pour the cold brew into the glass. Then, using a hand whisk or milk frother with a cold foam setting, froth together the half and half and sugar cookie syrup.

Pour the sugar cookie cold foam over the top of the cold brew and enjoy!

How to make

Step 1: Simmer coconut milk and coconut sugar

To begin, pour coconut milk and light brown sugar into a small sauce pan (Image 1). Then, whisk together until the sugar dissolves and bring to a boil (Image 2).

Be careful not to let the mixture boil over out of the pan. Then, reduce the heat to a simmer and simmer uncovered for 15 minutes (Image 3). Stir the syrup occasionally with a whisk.

Step 2: Mix in extracts and cool completely

Then, remove from heat. Carefully whisk in the vanilla extract, almond extract, butter and salt.

Mix until the extracts are fully mixed into the syrup (Image 4).

Step 3: use in your favorite beverage

Finally, allow the mixture to cool completely and transfer to a mason jar. Store in the fridge and use in your favorite coffee drinks!

Copycat Starbucks Iced Sugar Cookie Almondmilk latte

Copycat Starbucks Sugar Cookie Almondmilk Latte

Make an iced sugar cookie almond milk latte at home with just a few simple ingredients!

  • 2 shots of espresso
  • 2 tbsp sugar cookie syrup
  • Ice
  • 1/2 cup almond milk
  • Sprinkles – optional

Brew two shots of espresso or prepare a small strong cup of coffee. Stir the sugar cookie syrup into the espresso.

Fill a glass with ice and pour the sweetened espresso over the ice. Froth the almond milk in a frother that has a cold setting or use a hand whisk.

Pour frothed almond milk into the glass. Top with festive sprinkles and enjoy!

If you don’t have an espresso machine you can use concentrated cold brew or a strong cup of coffee. Feel free to use plain dairy milk or oat milk in place of the almond milk.

Storage

Store this syrup in an airtight container in the fridge for up to 2 weeks. It may harden slightly in the fridge due to the coconut milk. Run it under some warm water in the jar to loosen the sugar cookie syrup.

Ingredients

  • 1 can 14.5oz of coconut milk
  • 1 cup light brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract don’t skip this!!
  • Optional – 1/4 tsp butter extract
  • 1/2 tsp salt

Instructions

  • Pour coconut milk and brown sugar into a sauce pan. Whisk together and bring to a boil. Be careful not to let the mixture boil over
  • Reduce the heat to a simmer and simmer uncovered for 15 minutes stirring occasionally. Remove from heat and whisk in the vanilla extract, almond extract, butter extract and salt.
  • Allow the mixture to cool completely and transfer to a glass jar with a lid. Store in the fridge and use in your favorite coffee drinks!

Recipe Notes

  • Store in an airtight container in the fridge for up to 2 weeks
  • If the mixture solidifies in the fridge, this is normal and due to the coconut milk. Just run the under warm water to loosen the syrup
  • You can use coconut sugar, dark brown sugar or white granulated sugar in place of the light brown sugar
  • The butter extract adds to that warm, freshly baked sugar cookie flavor. Add it if you have it, but you can skip it if you don’t
  • If you don’t like coconut milk or cant have it, use 1 can sweetened condensed milk and cut the sugar amount in half

      I would not recommend it. I don’t think oat milk has high enough fat content so you won’t get a nice caramelized syrup. You can try it but you may not be happy with the texture of the final result.

    Hello!

    I cant find butter extract where I live in Canada (and amazon doesnt ship it to Canada). I do want that buttery flavour to be in the syrup so is it possible to use actual butter as a replacement? If so, how much and how would you combine it?

      I would not sub actual butter since it will alter the texture and consistency. This recipe still works without the butter extract so I would just omit.

    Omg!!! Definitely make this! It’s so easy and super delicious. My husband is obsessed with Starbucks and this is going to save us so much money.

    Made it exactly as the recipe says except used organic dark brown sugar. It came out perfect ! I can’t wait to try this on pancakes and on ice cream.

    This syrup is next level good! And doesn’t hurt your stomach or taste fake.

    I know someone already asked this! But I don’t have coconut milk on hand and want to make this tonight 😂

    Does regular milk change the flavor by a lot? And would shelf life with regular milk is only a week?

      The flavor shouldn’t change drastically. If you like normal Starbucks seasonal drinks, it should be fine. Those all use regular milk unless you switch up the order. 🙂

      It would probably be best to use it up within a week.

    Hi! So excited to try this. Two questions – One, how long does this last in the fridge? Two, I’m vegan but don’t like the taste of coconut. Would this work with any other milk alternative (oat, almond, soy, etc?)

      up to two weeks in the fridge! and no sorry those just don’t have a high enough fat content so you don’t get a nice caramelized syrup also I find when cooked they all change flavor. Light coconut link has a very mild coconut flavor especially when cooked with the sugar and extracts so I always use light coconut milk. You can try one of those other milks, but I worry you will be unhappy with the final result.
