Serving suggestions

This high protein buffalo chicken dip is the perfect thing to serve for game day. Thanks to its small single serve portion sizes, it is great to make for smaller gatherings.

I like to serve it with freshly cut veggies like celery and raw broccoli. It is also great with classic dipping options like corn chip, tortilla chips or crackers.

Ingredients and Ingredient Substitutions

  • Cottage cheese – low fat cottage cheese is what makes this dip creamy, high in protein and cheesy without the cheese.
  • Hot sauce – I like to use franks red hot for the perfect balance of spice and flavor. You can always add more or less hot sauce depending on how spicy you like your buffalo chicken dip.
  • Milk – I used a little 2% milk to help the sauce blend smoothly.
  • Ranch seasoning powder – Adds tons of flavor to this dip. You can substitute the milk and ranch seasoning for 1/4 cup ranch dressing.
  • Canned chicken breast – Using canned chicken breast in water makes this recipe extra quick and easy. It also makes it very cost effective. You can always use shredded rotisserie chicken OR poached and shredded chicken breast.
  • Shredded cheddar cheese – melty cheese on top of the dip when it comes out of the oven is part of what gives this high protein option that classic buffalo chicken dip flavor.

How to make

Step 1: Blend cottage cheese buffalo sauce

To begin, preheat oven to 350F and grease 2 small oven safe ramekins. I like to use 12oz ramekins.

Then, use an immersion blender or standard blender to blend together cottage cheese, hot sauce, milk and ranch seasoning. Blend until completely smooth. I like to taste this quickly after blending and add more hot sauce if I want it extra spicy

Step 2: Mix Buffalo Chicken Dip

Next, drain water from canned chicken breast and mix with blended cottage cheese mixture using a flat spatula.

Separate dip evenly into the 2 prepared ramekins.

Step 3: Top with shredded cheese and bake

Then, top each ramekin with 1/4 cup shredded cheese. Place ramekins on a baking sheet to make it easier to take in and out of the oven. Place in the oven to bake at 350F for 30 minutes.

Allow the single serve buffalo chicken dip to cool slightly, garnish with fresh sliced green onions and serve with celery, crackers or tortilla chips.

Make ahead, Storage and Reheating

If you want to prep this high protein buffalo chicken dip ahead of time, follow the instructions up until the baking step. Then, cover and store in the fridge for up to 3 days and bake when you are ready to enjoy.

If you have leftovers, allow to cool completely and then cover the ramekin. Place in the fridge for up to 4 days.

Reheat uncovered in the microwave until warmed through, about 2 minutes. You can also reheat in the oven at 300F for 10-15 minutes

Single Serve High Protein Buffalo Chicken Dip

A delicious high protein buffalo chicken dip that is great as a game day appetizer or quick lunch

Ingredients

  • 1 cup low fat cottage cheese
  • 3 tbsp hot sauce
  • 2 tbsp milk
  • 2 tbsp ranch seasoning powder
  • 12.5 oz can of chicken breast in water drained
  • 1/2 cup shredded cheddar cheese

  • Preheat oven to 350F and grease 2 small oven safe ramekins (I like to use 12oz ramekins)

  • Reheat leftovers in the microwave uncovered for 1-2 minutes or in the oven at 300F covered for 10-15 minutes
  • You can use shredded rotisserie chicken breast or poached and shredded chicken breast instead of canned chicken
