Roasted Red Pepper and Feta Egg Bites

These Roasted Red Pepper and Feta Egg Bites are a delicious Starbucks egg white bite copycat. You can make these fluffy egg bites at home in the instant pot or on the stovetop.

How are these roasted red pepper and feta egg bites different from egg muffins that you make in the oven?

These roasted red pepper and feta egg bites are steamed in a silicone mold instead of baked in the oven. This method makes these Starbucks copycat egg bites soft and fluffy.

They have the same texture as the popular Starbucks red pepper egg bites. You can make them with whole eggs or egg whites and still get the same fluffy texture! When you mix egg white and cottage cheese you are left with the perfect egg bite texture.

When you eat these sous vide egg bites breakfast you feel like you are eating a fluffy souffle. You can also freeze and reheat these egg bites and they will still have the same soft texture.

Kitchen tools

Roasted red pepper and feta egg bites can be prepared in both the Instant Pot and on the stovetop. Either way, you will need silicone egg bite molds and a metal rack.

Most of these egg bite molds have seven slots. This recipe for healthy egg bites makes one seven bite batch.

You will also need a blender in order to blend the egg mixture together. Other than the blender and the silicone mold you will either need an Instant Pot or large pot for steaming the egg bites.

Serving Suggestions

These egg white egg bites are perfect as they are, but you can add a few toppings to make them even more delicious. I like to serve mine with some sliced green onions and hot sauce.

Ingredients

The secret ingredient that helps give these egg bites their fluffy texture is cottage cheese. You only need a few simple ingredients to make these Starbucks egg bites at home!

  • Whole eggs or egg whites
  • Cottage cheese
  • Roasted red peppers
  • Crumbled feta cheese
  • Salt and pepper

Ingredient Substitutions

Cottage cheese is a healthy and high protein ingredient, but if you want to make these egg white roasted red pepper bites even creamier you can use cream cheese. Just replace the cottage cheese with about 4oz of cream cheese.

Feta is the ideal cheese mix in for these bites, but you can use any type of cheese that you like. Some wonderful options include goat cheese, monterey jack cheese and shredded sharp cheddar cheese.

Time to cook these healthy roasted red pepper and feta egg bites!

Step 1 – Prep

Firstly, slice the roasted red peppers into small pieces. Then, crumble the feta into small crumbles unless you purchased pre crumbled feta.

Prepare your Instant Pot or regular pot by pouring 1 cup or 2 cups of water into them. Finally, spray your silicone egg molds with a spray of oil.

Step 2 – Blend

Then, add eggs, cottage cheese, and salt to a blender. Blend until a smooth mixture remains.

Step 3 – Assemble

Next, pour the egg batter into the silicone egg mold cups until they are 3/4 of the way full.

Then, add some peppers and feta to each egg bite and mix in gently with a toothpick.

Step 4 – Steam

If you are using an Instant Pot to cook your egg bites, lower the egg mold on the metal rack into the Instant Pot. Then, close the pot and set the lid to sealing.

Then, set the Instant Pot to Steam for 10 minutes. The Instant Pot will come to pressure and then steam for 10 minutes.

Once the timer goes off, manually release the pressure. Remove the egg bites from the Instant Pot and allow them to cool before enjoying.

If you are using the stovetop method, lower the egg mold on the metal rack into the pot. Then, turn on the heat to high.

Once the water at the bottom of the pot is bubbling, reduce the heat to medium-low and cover the pot.

Then, allow the egg bites to steam for 15 minutes. Next, turn off the heat and remove them from the pot. Allow the egg bites to cool slightly before eating.

Can I use just egg whites?

If you want to make these roasted red pepper and feta egg bites with just egg whites, you can swap the 5 full eggs for 1 cup of egg whites. They will taste just like the Starbucks egg white bites!

How Many Bites are made in one batch?

This healthy Starbucks copycat egg bite recipe makes 7 bites! If you want to make a double batch just double the recipe and pressure cook in two batches.

Can I freeze these egg bites?

Yes! You can freeze these egg bites and reheat them later. They are ideal for meal prep. Make sure your egg bites cool completely and then place them in an airtight container to freeze.

Reheat the egg bites in the microwave, toaster oven or the air fryer. To get the tops nice and crispy I like to air fry at 400F for 5-7 minutes.

Starbucks copycat roasted red pepper and feta egg bites

Ingredients

  • 5 eggs
  • 3/4 cup cottage cheese
  • 1 tsp salt
  • 1/2 cup crumbled feta
  • 1/4 cup sliced roasted red pepper

Instructions

Instant Pot

  • Blot the roasted red peppers with a paper towel until dry – excess moisture will make the egg bite soggy
  • Cut the roasted red peppers into small pieces
  • Add eggs, cottage cheese, and salt to a blender and blend until smooth
  • Take a silicone egg bite mold and grease it with spray oil
  • Add some crumbled feta and red pepper slices to each of the egg mold slots
  • Pour the egg mixture into each of the egg mold slots
  • Add 1 cup water to the instant pot
  • Place egg mold on a trivet and slowly lower the egg mold on the trivet into the instant pot
  • Close the lid of the instant pot and set the valve to sealing
  • Cook on steam for 10 minutes
  • Allow the instant pot to come to pressure and then steam for 10 minutes
  • When the instant pot beeps, release the pressure and remove the egg bites
  • Allow the egg bites to cool fully before removing from the mold and enjoy!

Stovetop

  • Blot the roasted red peppers with a paper towel until dry – excess moisture will make the egg bite soggy
  • Cut the roasted red peppers into small pieces
  • Add eggs, cottage cheese, and salt to a blender and blend until smooth
  • Take a silicone egg bite mold and grease it with spray oil
  • Add some crumbled feta and red pepper slices to each of the egg mold slots
  • Pour the egg mixture into each of the egg mold slots
  • Add 2 cupa water to a large pot
  • Place egg mold on a trivet and slowly lower the egg mold on the trivet into the pot
  • Heat the pot over high heat until the water boils
  • Reduce heat to a simmer
  • Cover the pot and allow the egg bites to steam for 15 minutes
  • Remove the pot from heat and remove the egg bites from the pot
  • Allow the egg bites to cool fully before removing from the molds and enjoying

    I made these with the leftover ham and cheddar from lunches – so good! I’m considering broiling or quickly searing the leftovers to try to get that “toastiness” the Starbucks ones have… wishing I had an air fryer just for these!

    Game changer! I’ve dreamed of making egg bites that have the same texture as Starbucks! I typically hate egg bakes so when I made these for my husband and I for easy breakfasts to go we were astonished at how good they were! These are a weekly staple in our household. We keep changing up the cheese for variety. So far Fontina is our fave!

      Hi Lisa, It totally depends on the brands of cottage cheese, feta, and red pepper you use so I would recommend plugging the info into a calculator on your own. https://cronometer.com/ is a good one
