Roasted Carrots with Whipped Goat Cheese, Honey and Pistachios

If you think carrots are a boring side dish, this Roasted Carrots with Whipped Goat Cheese recipe is about to change your mind. Whole carrots are cut lengthwise and roasted flat side down until they’re tender and deeply caramelized. Then they’re layered over a bed of silky, honey whipped goat cheese and finished with crunchy pistachios, fresh thyme, flaky sea salt and one more drizzle of honey.

It looks like something you’d order at a restaurant, but it takes just a handful of ingredients and about 10 minutes of hands-on work. It’s sweet, tangy, creamy and crunchy all at once. This is the side dish I’ll be bringing to every holiday table this year, and it disappears every time.

Why You’ll Love This Recipe

  • Big wow factor, little effort. The oven does most of the work while you whip the cheese in a couple of minutes. Then, assemble the dish with toppings that add flavor and texture to the dish.
  • No sticky glaze. The carrots roast with just olive oil and salt, so their natural sweetness shines. The honey lives in the whipped goat cheese and on top.
  • Buffet friendly. It’s delicious warm or at room temperature, so it can sit out on a holiday spread.

Ingredients You’ll need

Here’s a quick look at the ingredients you need to make this roasted carrots with whipped goat cheese dip.

an overhead shot of roasted carrots ingredients in ceramic bowls and on ceramic plates
  • Whole carrots: Medium to large whole carrots work best here. Skip bagged baby carrots. They don’t have a flat cut side, so they won’t caramelize the same way. Small whole carrots with their tops trimmed work great, though! Just halve them lengthwise and start checking them a few minutes early. Rainbow carrots make it even prettier.
  • Olive oil and kosher salt: That’s all the carrots need. Simple seasoning lets the roasted, caramelized flavor come through.
  • Goat cheese: A 4 oz log of plain goat cheese. Let it sit out for 15–20 minutes before whipping so it blends up smooth and fluffy.
  • Whole milk: Just 2 tablespoons loosens the goat cheese into a light, spreadable texture without diluting its tangy flavor.
  • Honey: Whipped into the goat cheese to balance its tang, then drizzled on top to finish.
  • Toasted pistachios: Add crunch and color. Toasting brings out their flavor, so don’t skip it!
  • Fresh thyme: Its earthy, slightly lemony flavor pairs beautifully with sweet carrots and tangy goat cheese.
  • Flaky sea salt: A final sprinkle makes all the flavors pop.

How to make Roasted Carrots with Whipped Goat Cheese

a baking sheet with carrots flat cut side down

Step 1: Prep and roast carrots. Peel the carrots and cut them so each piece has one flat side and one rounded side. Toss with olive oil and salt, then lay them flat side down on a parchment-lined baking sheet. Roast at 400°F for 35 minutes.

Step 2: Whip the goat cheese. Blend the goat cheese, milk and honey in a food processor until smooth and creamy, scraping down the sides as needed. No food processor? An electric hand mixer works well!

Step 3: Assemble. Spread the whipped goat cheese onto a serving platter and layer the warm carrots on top.

Step 4: Layer the roasted carrots on top.

Mad’s Expert Tips for the Roasted carrots with whipped goat cheese 🥕

  • Cut them evenly. Similar-sized pieces roast at the same rate, so thinner ends won’t burn while thicker pieces are still firm.
  • Flat side down is key. The flat cut side sits directly on the hot pan, which gives you that deep golden caramelization.
  • Don’t crowd the pan. Give the carrots space so they roast instead of steam. Use two pans if needed.
  • Use room temperature goat cheese. Cold goat cheese can stay a little lumpy. Softened cheese whips up silky smooth.
  • This dish works as an appetizer too. Serve with sliced baguette or crostini for scooping up the whipped goat cheese and a bite of carrot together. It makes a stunning party starter.

Recipe Variations

  • Hot honey: Swap the drizzle on top for hot honey for a sweet and spicy finish.
  • Maple: Use maple syrup in place of honey, both in the cheese and on top.
  • Swap the cheese: Whipped feta or ricotta both make great substitutes for goat cheese. Feta is saltier, so taste before adding the flaky salt. Trader Joe’s sells a ricotta dip that is already whipped and it would be a perfect shortcut for this recipe.
  • Different nuts: Toasted pecans, walnuts or hazelnuts all work in place of pistachios.
  • Pomegranate: Scatter pomegranate seeds on top for a festive pop of color at the holidays.
  • Spiced carrots: Toss the carrots with a pinch of cumin, smoked paprika or harissa before roasting.

Make ahead tips (Great for Thanksgiving!)

  • Whipped goat cheese: Make it up to 24 hours ahead and store it covered in the fridge. Let it sit at room temperature for about 20 minutes and give it a stir before spreading.
  • Carrots: Peel and cut them up to 2 days ahead and store them in a water bath in an airtight container in the fridge. Dry completely and then roast just before serving.
  • Pistachios: Toast and chop them up to a week ahead and store them in an airtight container.
  • Day of: Roast the carrots, spread the cheese and assemble right before dinner.

Storage

Store leftover carrots and goat cheese separately, if possible, in airtight containers in the fridge for up to 3-4 days. Reheat the carrots in a 400°F oven or air fryer for a few minutes until warmed through, then serve them over the whipped goat cheese at room temperature.

Servings: 4

Ingredients

  • 1 ½ lb whole carrots
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 4 oz log goat cheese
  • 2 tbsp whole milk
  • 2 tsp honey + more to drizzle on top
  • ¼ cup chopped toasted pistachios
  • 2 tbsp fresh thyme leaves
  • Flaky sea salt

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper. While the oven preheats, peel the carrots, cut each carrot in half crosswise, then cut each piece in half lengthwise so it has one flat side and one rounded side
  • Toss the carrots in olive oil and season with salt. Place on the baking sheet with the flat cut side down.
  • Place in the oven to roast at 400F for 35 minutes.
  • When the carrots are almost done roasting, place room temperature goat cheese, milk and honey in a food processor and process until smooth. You may need to stop the food processor and scrape down the sides and process again.
  • Spread whipped goat cheese onto a serving plate and layer the roasted carrots on top.
  • Garnish with the chopped pistachios, thyme, sea salt and a drizzle of honey before serving.

Recipe Notes

Use room temperature goat cheese. Cold goat cheese is hard to whip and will stay lumpy. Set it out at least 20-30 minutes before making the whipped base.
The whipped goat cheese can be made up to 24 hours ahead and stored covered in the fridge. Let it come to room temperature and stir before spreading. Assemble just before serving so the warm carrots slightly soften the cheese.
Roast the carrots until they have some color. You want the carrots to be tender all the way through with caramelized, slightly golden edges. Do not pull them out too early or they will be pale and less flavorful.
Assemble right before serving. Smear the whipped goat cheese on the platter, arrange the carrots on top, and add the toppings just before serving. If assembled too far ahead the goat cheese can get watery.
This dish works as an appetizer too. Serve with sliced baguette or crostini for scooping up the whipped goat cheese and a bite of carrot together. It makes a stunning party starter.
