- Dijon Mustard – Dijon mustard adds a slight tanginess to the dish, balancing out the richness of the beef and creamy sauce.
Ingredient Substitutions
If you do not want to use ground beef in this stroganoff recipe, you can use any ground meat as your protein. My personal recommendation would be ground chicken.
To make this recipe gluten-free, you can use gluten-free flour. You would also need to choose a gluten-free noodle instead of the egg noodles that this recipe calls for.
If you don’t like sour cream or don’t have it on hand, greek yogurt is a great substitution. It will add some protein, too!
Baby bella mushrooms (also called cremini mushrooms) are most typically used in this ground beef stroganoff, but white mushrooms are a good alternative. They are mild in flavor and have a similar texture.

How to make
Step 1: Saute beef, onions, and mushrooms
To start, place ground beef in a large skillet over medium heat (Image 1). Start to break it up and season with salt and pepper and then crumble and brown ground beef for about 7 minutes. Remove the beef from the pan, set aside, and wipe excess grease out of the skillet.
Next, heat oil over medium-low heat in the same skillet and add the diced onion and minced garlic to the skillet. Allow that to saute for a couple minutes and then add the mushrooms to the pan (Image 2).
Saute sliced mushrooms for 5 minutes tossing frequently. Then, season with a pinch of salt.

Step 2: Begin making sauce
After that, place butter in the skillet and allow it to melt completely (Image 3). Sprinkle flour into skillet and toss so that it makes a paste with the butter and mushrooms.
Next, slowly pour the heavy cream and beef broth into the skillet. You will want to stir as you pour so that the flour and butter paste dissolve into the liquid (Image 4).

Step 3: Finish Sauce and serve
Now it is time to mix the sour cream and dijon into the sauce (Image 5). Then, pour the ground beef crumbles back into the pan (Image 6).
Let the whole thing simmer for about 5 minutes then serve over egg noodles and garnish with fresh parsley or fresh thyme. Enjoy!
