Greek Sheet Pan Chicken and Veggies is a high protein weeknight dinner that your whole family will love. Toss chicken and veggies in a flavorful seasoning blend and bake. Serve with feta, fresh lemon and tzatziki for a satisfying one pan meal.

The best part about this recipe is that it is a complete meal on its own, but you can add sides if you like, such as this Greek salad. If you don’t have tzatziki, you could add a drizzle of this Greek yogurt salad dressing.

Ingredients and Substitutions

  • Boneless skinless chicken breasts – you can use chicken tenderloins or boneless chicken thighs instead
  • Zucchini – the zucchini is the perfect addition to this Greek inspired recipe
  • Red onion – I love the flavor the roasted red onion in this dish, but for a more mild flavor you can use a yellow onion.
  • Bell pepper – you can use red, orange or yellow bell pepper for this recipe. You could also use roasted red peppers to change up the flavor profile a little.
  • Baby potatoes – I used gold potatoes for this recipe, but you could also use red potatoes
  • Olive oil – the extra virgin olive oil adds a little additional flavor to your dish
  • Kosher salt, dried oregano, garlic powder, onion powder, ground cumin, paprika – this spice blend creates the Greek flavor that seasons both the chicken and the veggies
  • Lemon – garnish your dish with lemon for a bit of zest
  • Feta cheese – the feta adds some tanginess and creaminess to your chicken and veggies
  • Tzatziki and fresh herbs – you can use any combo of herbs you enjoy to garnish your plate

How to Make

Step 1: Prep your ingredients

Preheat oven to 400F and line a baking sheet with parchment paper.

Cut the chicken breast into small bite sized strips. Cut all of the veggies into small pieces ensuring that they are even in size so that they cook evenly.

Place chicken and veggies in a large bowl and toss in olive oil. Combine all spices in a separate bowl and then toss the chicken and veggies in the spice mixture.

Step 2: Bake and Enjoy

Pour ingredients onto the sheet pan and bake at 400F for 25-30 minutes.

Remove from oven, squeeze juice from the lemon on top and immediately top with crumbled feta so it melts slightly from the heat of the meal

Serve with a dollop of tzatziki and fresh herbs.

Storage and Reheating

Once cooked, keep this Greek sheet pan chicken and veggies in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or in the oven until warmed through.

Ingredients

  • 1.5 – 2 lb boneless skinless chicken breasts
  • 1 medium zucchini
  • 1 medium red onion
  • 1 bell pepper
  • 24 oz baby potatoes
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 2 tsp dried oregano
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 lemon
  • ½ cup crumbled feta cheese
  • Tzatziki and fresh herbs for serving
