Ingredients and Ingredient Substitutions
- Lemon – the lemon zest and juice add a ton of brightness to the marinade
- Extra virgin olive oil – use extra virgin olive oil for a bolder flavor
- Garlic – you can add more or less garlic depending on how
- Kosher salt – I prefer using kosher salt for a gentler flavor, but if you are using table salt, use half the amount
- Paprika – for this Greek chicken skewers recipe, we want to use sweet paprika rather than smoked
- Oregano – add oregano for the classic Greek flavor
- Onion powder – the onion powder adds a little extra depth to the marinade to make the perfect skewer
- Chicken breasts – be sure to use boneless and skinless to keep this recipe easy
You can use chicken thighs, but I find them a bit more difficult on a skewer. You could also swap in beef, such as ribeye or strip steak.

How to make
Step 1: Make Marinade
If you are using bamboo skewers, submerge them in water for a couple of hours before cooking.
Add lemon zest, lemon juice, olive oil, grated garlic, salt, paprika, dried oregano, and onion powder in a mixing bowl. Whisk together until thoroughly combined.
Cut chicken breasts into small bite sized cubes and place in the bowl with the marinade. Toss to coat chicken evenly. Cover bowl and place in the refrigerator to marinate.
Step 2: Grill and enjoy
Slide marinated chicken onto skewers. Preheat grill over high heat and make sure grill grates are very clean to prevent sticking. When grill is heated to at least 550F, turn heat down to med-high and place skewers on grill.
Cook for 10-12 minutes – rotating every 2-3 minutes. Ensure that the chicken has an internal temperature of at least 165F before removing from the grill.
Serve warm with sides or let cool and serve on a salad.

Storage and Reheating
Store leftovers in an airtight container in the fridge for up to 4 days. I love to have any leftovers cold in a salad, but if you would like to reheat, pop them in the toaster oven until warmed through.

Greek Chicken Skewers

- 2 tsp kosher salt – if using table salt only use 1 tsp
- 1 tsp paprika (sweet paprika not smoked)
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 ½ lb boneless skinless chicken breasts
