Ingredients You’ll Need

- Lemon – the lemon zest and fresh lemon juice add a ton of brightness to the marinade. You can use red wine vinegar in place of lemon juice if you prefer.
- Extra virgin olive oil – use extra virgin olive oil for a bolder flavor
- Fresh garlic – freshly grated garlic adds intense garlic flavor to the marinade. You can add more or less garlic depending on how
- Kosher salt – I prefer using kosher salt for a gentler flavor, but if you are using table salt, use half the amount. I personally don’t add black pepper to this greek chicken marinade, but feel fresh to add it to the other spices for an extra kick!
- Paprika – for this Greek chicken skewers recipe, we want to use sweet paprika rather than smoked
- Oregano – add oregano for the classic Greek flavor
- Onion powder – the onion powder adds a little extra depth to the marinade to make the perfect skewer
- Chicken breasts – be sure to use boneless and skinless to keep this recipe easy
You can use boneless skinless chicken thighs, but they may take a bit longer to cook. You could also swap in beef, such as ribeye or strip steak. I have a similar grilled surf and turf skewer recipe that is made with shrimp and beef.
I like to garnish the finished dish with lemon zest and fresh herbs like chopped parsley or dill. Then, serve the tender cooked chicken with a fresh Greek salad made with cherry tomatoes, cucumber, bell pepper, kalamata olives, feta cheese and dried herbs tossed in olive oil and vinegar.
How to make this easy greek chicken recipe

Step 1: Prep wooden skewers in cool water. Cube chicken breast and marinate in lemon zest, lemon juice, olive oil, grated garlic, salt, paprika, dried oregano, and onion powder in a mixing bowl.

Step 2: Marinate chicken in the refrigerator for a few hours then thread each piece of chicken onto a wooden skewer. You can also use metal skewers.

Step 3: Preheat outdoor grill or grill pan and then place the chicken skewers on the warm grill or pan. Cook for 10-12 minutes, rotating every couple of minutes. Check for an internal temperature of 165F before removing from heat.
I sometimes serve these tender grilled chicken cubes on a platter with raw veggies, hummus, homemade tzatziki sauce, and pita bread. Then, I allow everyone eating to pick the ingredients they would like.

Storage and Reheating for Greek Chicken Kabobs
Store leftovers in an airtight container in the fridge for up to 4 days. I love to have any leftovers cold in a salad, but if you would like to reheat, pop them in the toaster oven until warmed through.

Greek Chicken Skewers
Ingredients
- 1 lemon – zested and then juiced
- 2 tbsp extra virgin olive oil
- 4 cloves garlic – grated or finely minced
- 2 tsp kosher salt – if using table salt only use 1 tsp
- 1 tsp paprika (sweet paprika not smoked)
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 ½ lb boneless skinless chicken breasts
Instructions
- ** Soak bamboo skewers in water for a couple of hours before cooking to prevent burning on the grill
- Add lemon zest, lemon juice, olive oil, grated garlic, salt, paprika, dried oregano, and onion powder in a mixing bowl. Whisk together until thoroughly combined.
- Cut chicken breasts into small bite sized cubes and place in the bowl with the marinade. Toss to coat chicken evenly. Cover bowl and place in the refrigerator to marinate for at least one hour or up to 4 hours.
- Slide marinated chicken onto skewers. Preheat grill over high heat and make sure grill grates are very clean to prevent sticking.
- When grill is heated to at least 550F, turn heat down to med-high and place skewers on grill.
- Cook for 10-12 minutes – rotating every 2-3 minutes. Ensure that the chicken has an internal temperature of at least 165F before removing from the grill.
- Serve warm with sides or let cool and serve on a salad.
