2tspkosher salt - if using table salt only use 1 tsp

1 ½lbboneless skinless chicken breasts
Instructions
** Soak bamboo skewers in water for a couple of hours before cooking to prevent burning on the grill
Add lemon zest, lemon juice, olive oil, grated garlic, salt, paprika, dried oregano, and onion powder in a mixing bowl. Whisk together until thoroughly combined.
Cut chicken breasts into small bite sized cubes and place in the bowl with the marinade. Toss to coat chicken evenly. Cover bowl and place in the refrigerator to marinate for at least one hour or up to 4 hours.
Slide marinated chicken onto skewers. Preheat grill over high heat and make sure grill grates are very clean to prevent sticking.
When grill is heated to at least 550F, turn heat down to med-high and place skewers on grill.
Cook for 10-12 minutes - rotating every 2-3 minutes. Ensure that the chicken has an internal temperature of at least 165F before removing from the grill.
Serve warm with sides or let cool and serve on a salad.
