Ingredients and Ingredient Substitutions
- Ground turkey – I love using ground turkey for this recipe, but you could also use ground chicken, ground pork, or lean ground beef
- Panko bread crumbs – I love the texture of panko in these meatballs, but you can also use regular
- Egg – the egg will bind the meatball together
- Scallion – the green onions pair perfectly with the ginger for an amazing flavor
- Grated ginger – you can use fresh grated ginger or pre grated ginger to save time
- Grated garlic – similar to the ginger, you can grate your own or use pre grated
- Sesame oil – the sesame oil adds the perfect umami flavor to your meatballs and sauce
- Kosher salt and black pepper – the salt and pepper are the only spices you need to complement the flavors of ginger, garlic and scallion
- Olive oil – you can use olive oil or another neutral oil like avocado oil
- Frozen stir fry vegetables – I love keeping this recipe easy by using frozen vegetables, but you can also make your own medley with fresh vegetables
- Low sodium soy sauce – make sure to use low sodium soy sauce to avoid making the sauce too salty for your meatball stir fry
- Rice vinegar – the rice vinegar brightens up the sauce
- Water – the water thins out the sauce to the perfect consistency and helps dissolve the corn starch
- Honey – use the honey for a little sweetness to balance out your sauce
- Cornstarch – thicken the sauce with cornstarch so that it coats the meatballs and vegetables

How to make
Step 1: Prepare the meatballs
Add ground turkey, panko bread crumbs, egg, sliced scaled, fresh grated ginger, grated garlic, sesame oil, salt and black pepper to a large mixing bowl. Mix with clean hands until just combined – do not over mix for tender meatballs.
Heat oil in a skillet over medium heat. Scoop out 2 tbsp of meatball mixture per meatball, roll into a tight ball and place in the skillet. Cook meatballs over medium heat until cooked through – about 6 minutes each side.
Step 2: Saute Stir Fry Vegetables and Make Sauce
Add frozen stir fry vegetables to the skillet. Toss and cover the skillet for the vegetables to warm through – about 6 minutes.
While the veggies cook, mix the sauce together. Whisk together low sodium soy sauce, rice vinegar, water, honey, cornstarch, fresh grated ginger, grated garlic and toasted sesame oil.
Step 3: Combine and serve
When the veggies are tender, pour the sauce into the pan and increase the heat slightly. Allow the sauce to bubble, thicken, and coat the meatballs and veggies.
Serve immediately over rice. Garnish with sliced scallion and sesame seeds

Storage and Reheating
Once prepared, store this meatball stir fry in an air tight container in the fridge for up to 5 days. To reheat, place in the microwave or on the stovetop until gently warmed through.

- 2 tbsp thinly sliced scallion + more for garnishing
- 2 tsp fresh grated ginger
- 1 tsp grated garlic
- 1 tsp toasted sesame oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp olive oil or avocado oil
- 1 20oz bag frozen stir fry vegetables
Sauce Ingredients
- 1/3 cup low sodium soy sauce
- 3 tbsp rice vinegar
- 2 tbsp water
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tsp fresh grated ginger
- 1 tsp grated garlic
- 1 tsp toasted sesame oil
