What should I serve with this apple cider vinegar salad dressing?

I love making loaded salads at home with all kinds of healthy ingredients. For protein I usually make some cast iron chicken thighs or pan seared chicken breasts.

Then, I make some pickled red onions to add extra flavor and crunch to my salads. Finally, I put it all on a bed of greens with some raw chopped veggies and crumbled cheese.

How to make Apple Cider Vinaigrette

Step 1: Blend vinegar and other ingredients

To begin, add apple cider vinegar, maple syrup, dijon mustard, salt and pepper to a blender and blend on high until thoroughly combined.

Step 2: Pour in the oil

Then, reduce blender speed to medium low and pour olive oil in through the top in a slow and steady stream. Increase the speed of the blender as you pour in more oil.

Step 3: Transfer apple cider vinegar salad dressing to a glass jar

Finally, blend until a fully mixed dressing remains. Pour into an airtight container for storage. Store in the fridge for up to 1 month.

This dressing is the best!! So much better than a store bought bottle and quick/easy to make. When I’m feeling lazy, I actually don’t always use the blender, I sometimes just shake it up in the jar. It doesn’t emulsify but I just shake it up again before I’m going to use it.

I just made this for my quick salad tonight! It’s a mist dressing staple from now on in my house! I always have these ingredients on hand and it’s very quick to put together. I used my immersion blender instead of my stand blender and it worked fine!

I just made a double batch of this dressing for my lunches this week (I eat a lot of salads), and it’s SO good. I love how versatile it is and how I could switch it up with a different vinegar or add some herbs or lemon juice for different flavors. Will definitely make again!
