These Fudgy Brownie Bites are like the perfect homemade brownie in a smaller package! Brownies from scratch are my favorite dessert so its perfect to have just one little bite.

I love fudgy brownies for dessert, but sometimes after a big meal I just want one small bite. These homemade brownie bites are the perfect post meal treat.

Make super fudgy brownies with simple ingredients. Just mix up the batter and bake in a mini muffin pan.

Serve these mini brownie bites with cream cheese frosting and some sprinkles as a festive party snack. Make a batch for meal prep and pack them as a small sweet dessert.

Ingredients

  • Semi sweet chocolate bar or semi-sweet chocolate chips
  • Butter
  • Large eggs
  • Sugar
  • Vanilla extract
  • Unsweetened cocoa powder
  • Salt
  • All purpose flour

Recipe Variations

Customize these chewy mini brownies with different toppings or mix ins. Top them with a creamy mint buttercream frosting to make them mint chocolate brownie bites.

Top this mini brownie recipe with chocolate ganache to make them even richer. To balance the deep chocolate flavor, top them with a simple vanilla butter cream frosting.

Stir chopped roasted nuts into the brownie batter. I like to use roasted pecans or walnuts for added flavor and crunch.

Steps 1 and 2 for making fudgy brownie bites

How to make

Step 1: Whip sugar and eggs together

To begin, preheat oven to 350F. Then, add eggs and sugar to a large mixing bowl. (Image 1). Mix with an electric mixer.

Mix until evenly combined, light and fluffy, about 3 minutes (Image 2).

Step 2: Mix in chocolate

Then, chop chocolate bar into chunks and melt with butter in the microwave or over a double boiler (Image 3). Only warm until the butter is just melted.

Mix until evenly combined. Pour chocolate and butter mixture into the eggs and sugar along with the vanilla extract. Mix again with the electric mixer (Image 4).

Steps 5 and 6 for making fudgy brownie bites

Then, add cocoa powder, flour, and salt to the bowl (Image 6). Fold in with a spatula.

Mix until the dry ingredients are just folded in (Image 7).

Step 3: Bake brownie bites

Next, grease a mini muffin tin (or use paper liners). Add 2 tbsp of batter to each of 24 muffin slots (Image 7).

Finally, place in the oven and bake at 350F for 15-17 minutes (Image 8). Remove from the oven and allow to cool. Cool brownie bites completely before removing from the tin to ensure they stay intact.

Expert Tip

In my experience you have to let these mini brownies cool completely before removing them from the pan. If they are removed before cooling, they can crumble and lose their shape.

To save time you can place the entire muffin pan in the fridge to help them cool faster.

Storage, Reheating and Freezing

Store these in an airtight container at room temperature for up to 5 days. For extra fudgy brownie bites, store them in the fridge!

These brownies can be frozen for up to 3 months. Freeze them in a freezer safe container like a plastic bag. Thaw them all together or one by one.

Fudgy Brownie Bites

Brownies from scratch in a smaller package! Make these delicious fudgy brownie bites with simple ingredients.

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 4 oz semi sweet chocolate bar
  • 8 tbsp unsalted butter
  • 2 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup all purpose flour
  • 1/4 tsp salt

  • Preheat oven to 350F. Add eggs and sugar to a large mixing bowl and mix with an electric mixer. Mix until light and fluffy – about 3 minutes.
  • Chop chocolate bar into chunks and melt with butter in the microwave or over a double boiler. Only warm until the butter is just melted. Mix until evenly combined and pour chocolate and butter mixture into the eggs and sugar along with the vanilla extract. Mix again with the electric mixer.
  • Add cocoa powder, flour, and salt to the bowl and fold in with a spatula. Mix until the dry ingredients are just folded in.
  • Grease a mini muffin pan (or use muffin lines) and add 2 tbsp of batter to each of 24 muffin slots. Place in the oven and bake at 350F for 15-17 minutes. Remove from the oven and allow to cool COMPLETELY before removing from the muffin pan. Removing from the pan prior to cooling may make them crumble.

Recipe Notes

  • Substitute the chocolate bar with semi sweet chocolate chips
  • Make these mini brownies gluten free by using a gluten free flour blend in place of all purpose flour

    Absolutely amazing! Could not believe how easy and quick they were to make and how fudgy and delicious!! I’ll never make boxed brownies again. I made 3 batches in 2 weeks. Kids and adults loved them. I made mine in a mini silicon muffin tin and really had to let them cool completely (hours) to avoid sticking! Iced them and put rainbow sprinkles on for a special birthday treat! Thanks for a great recipe!!

    Mine sunk in the middle and are hard to remove from the prepared pan. I see other recipes with baking powder. Would that help?

      Hmm. The sinking could be tied to under baking. Did you test with a toothpick? The sticking may have happened if the pan wasn’t greased enough or if you tried to remove before they were cool. I hope this helps!
