Ingredients and Ingredient Substitutions
- Bacon – any type of pork bacon works best for this dip! If you want to use a thick cut bacon, give it a little extra time to cook and get crispy before adding the dates to the pan.
- Dates – I like to use medjool dates in my recipes because they are always plump, soft and perfectly sweet. You can also use dried figs or prunes in place of dates
- Boursin cheese – I like to use boursin cheese because the garlic and herb flavor perfectly compliments the bacon and dates. You can use any herbed soft cheese or even just a plain goat cheese.
- Heavy cream – whip the cheese with some cream to create a light, fluffy bed for the warm bacon and dates to lay on
- Hot honey – this is optional, but a drizzle of hot honey over this boursin cheese dip really elevates all of the flavor. If you don’t like spice, you can use normal honey or omit it all together.
- Fresh thyme and flakey sea salt – garnish the dip with some fresh herbs and salt at the end. If you do not like thyme you can use some sage ribbons, rosemary or even parsley.

How to make
Step 1: Saute bacon
To begin, heat a frying pan over medium heat and add the bacon to the pan. Cook the bacon pieces until almost completely cooked and browning. This will take about 10 minutes depending on the thickness of the bacon.
Step 2: whip boursin cheese and add dates to the bacon
While the bacon is cooking, whip the boursin cheese and heavy cream together with an electric hand mixed until smooth and fluffy. Spread whipped cheese mixture onto a plate or shallow bowl
When the bacon is almost completely cooked, add the dates to the pan and toss to mix evenly with the bacon. Cook for another 2-3 minutes or until the dates are soft and the bacon is browned and crisp.
Step 3: Combine everything and top with hot honey
Remove pan from heat and pour excess grease out of the pan or dab it out with a paper towel. Pour cooked bacon and dates over the cheese.
Drizzle hot honey over top and garnish with thyme and flakey sea saltServe warm with toasted slices of baguette or crackers.
Prep ahead
I find that this dip tastes best if it is served immediately while still warm. If you need to prep it ahead of time, prep the cheese layer and bacon date layer separately and store in the fridge.
When you are ready to serve, allow the cheese mixture to come to room temperature and spread into a shallow bowl. Heat the bacon and date mixture over med low in a frying pan and pour over the cheese. Garnish as instructed and serve.

Ingredients
- 5 strips strips of bacon cut into small pieces
- 5 medjool dates pitted and cut into bite sized pieces
- 1 container of boursin cheese (5.3oz) can use any herbed soft cheese or goat cheese
- ¼ cup heavy cream
- 1 tbsp fresh thyme leaves
- Hot honey and flakey sea salt for topping

Recipe Notes
- Standard pork bacon works best for this recipe. Turkey bacon will not work.
- You can use thick cut bacon but add extra cook time to ensure that it crisps properly
- You can use dried figs, apricots or prunes in place of the dates
- Garnish with any fresh herbs that you like
- Swap hot honey for regular honey if you don’t like spice
