5medjool datespitted and cut into bite sized pieces
1container of boursin cheese (5.3oz)can use any herbed soft cheese or goat cheese
¼cupheavy cream
1tbspfresh thyme leaves
Hot honey and flakey sea salt for topping
Instructions
Heat a frying pan over medium heat and add the bacon to the pan. Cook the bacon pieces until almost completely cooked and browning - about 10 minutes.
While the bacon is cooking, whip the boursin cheese and heavy cream together with an electric hand mixed until smooth and fluffy. Spread whipped cheese mixture onto a plate or shallow bowl
When the bacon is almost completely cooked, add the dates to the pan and toss to mix evenly with the bacon. Cook for another 2-3 minutes or until the dates are soft and the bacon is browned and crisp.
Remove pan from heat and pour excess grease out of the pan or dab it out with a paper towel.
Pour cooked bacon and dates over the cheese. Drizzle hot honey over top and garnish with thyme and flakey sea salt
Serve warm with toasted slices of baguette or crackers.
Notes
Standard pork bacon works best for this recipe. Turkey bacon will not work.
You can use thick cut bacon but add extra cook time to ensure that it crisps properly
You can use dried figs, apricots or prunes in place of the dates
Garnish with any fresh herbs that you like
Swap hot honey for regular honey if you don’t like spice
