  • Dried buckwheat soba noodles – these are Japanese noodles made from buckwheat flour and water. If you cannot find them, you can sub for another thin noodle.
  • Boneless skinless chicken breast – you can sub chicken thighs if you prefer
  • Shredded carrots and cooked, shelled edamame, and green onion – These three veggies are what I typically think of when I think of soba noodle bowls, but feel free to get creative with veggies of your choice. A variety of vegetables add texture to the dish. For even more veggies, throw in a few handfuls of shredded cabbage.
  • Soy sauce , sesame oil, rice vinegar – These three come together to make the delicious stir-fry sauce. You can substitute the rice vinegar with lime juice for a brighter, more acidic taste.
  • Fresh grated ginger – adds a nice kick of flavor and freshness to the sauce
  • Toasted sesame seeds – an optional but delicious final touch. I also like to garnish with extra green onion and some cilantro if I have it on hand.

Step 1: To begin, prepare and boil soba noodles according to package instructions in lightly salted water.

  • The best way to eat warm – If you want to heat these chicken soba noodles up, I recommend heating the sauce and pouring it over the warm soba noodles and chicken. You can also simply reheat these noodles in the microwave. A cold soba noodle salad also makes for delicious leftovers.
  • Check ingredients for gluten free needs – Frequently, soba noodles are made with additional whole wheat flour to prevent the noodles from deteriorating. Soba noodles and chicken in a sesame, soy, ginger sauce

Ingredients

  • 1 pack of dried soba noodles (10oz)
  • 2 boneless skinless chicken breasts
  • 1 tsp kosher salt
  • 1 tsp ground ginger powder
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 1/2 cups shredded carrots
  • 10 oz cooked and shelled edamame beans ~ 2 cups
  • 1/3 cup thinly sliced green onion
  • 1/3 cup soy sauce low sodium
  • 3 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp fresh grated ginger
  • 2 tbsp toasted sesame seeds

Instructions

  • Prepare soba noodles according to package instructions in lightly salted water. Drain noodles after cooking, rinse thoroughly with cold water and set aside.
  • Cut chicken breast into small bite sizes pieces. Season with salt, ginger powder, and garlic powder.
  • Heat olive oil in a frying pan over medium-high heat. Add seasoned chicken to the pan and cook for 8 minutes – tossing frequently. Check for an internal temp of 165F before removing chicken from pan.
  • While the chicken cools, mix together low sodium soy sauce, sesame oil, rice vinegar and fresh ginger in a small mixing bowl.
  • Add soba noodles to a large mixing bowl with carrots, edamame, green onion and cooked chicken
  • Pour the sauce over the soba noodles, chicken and veggies and toss to coat everything evenly. Toss in toasted sesame seeds and serve

  • If you want to re-heat these chicken soba noodles, I recommend heating the sauce and pouring it over the warm soba noodles and chicken. You can also simply reheat these noodles in the microwave.

    I was looking for something good to make with the soba noodles I hade in the pantry and this was a good find! Made this for lunch for week and it was truly enjoyable all week. Normally when I meal prep lunch I get sick of it by Wednesday… not this one will enjoy Thursday as much as Monday.
    This was an easy prep not a lot of effort to get it together.
    I did make 1 minor adjustment… I split the sesame oil 1/2 spicy sesame oil and 1/2 regular sesame oil.
    Loved it will make again and definitely try other recipes!

    I literally just finished making this recipe for lunches this week – I love it! I enjoy the different textures the ingredients provide.     I think the best part about this recipe is its simplicity- it makes it so easy to supplement ingredients if you don’t have something on hand (such is the case often in the middle of a pandemic). I used rice noodles instead & used steamed shrimp & it was still delicious. Keeps really well in the refrigerator for a quick lunch.

    Loved this recipe! Couldn’t find soba noodles so I modified with chow mein and swapped the edamame for broccoli – still delicious. Recipe is versatile and the sauce/dressing really makes it so yummy.
