I make a lot of chicken recipes, but I think pork chops are a truly underrated cut of meat. If they are prepared properly, they are very moist and juicy.
It is so easy to make a delicious pork chop dinner in one pan with this sheet pan supper recipe. Just bake the boneless pork chops and veggies in a delicious balsamic marinade.

- Mixing bowls

- Sheet pan
- Parchment paper

What ingredients will I need to make this healthy pork chop dinner?
You will be amazed at how easy it is to make this pork chop sheet pan supper with just a few simple and paleo ingredients.
- Boneless pork chops
- Brussels sprouts
- Mini potatoes
- Dijon mustard
- Honey
- Balsamic vinegar
- Avocado oil
- Salt
- Ground black pepper

How to make a pork chop sheet pan dinner
Step 1: Prep veggies and marinade
To being, preheat oven to 475F. Then, trim brussels sprouts and cut into quarters.
Next, cut mini potatoes in half or into quarters depending on the size. Prepare the balsamic marinade by mixing together avocado oil, dijon mustard, honey, balsamic vinegar, salt and pepper.
Step 2: Baste pork chops and toss veggies in marinade
Then, line a sheet pan with parchment paper. Place 4 boneless pork chops on a the sheet pan and brush a generous amount of the marinade onto the top and bottom of each pork chop.
Next, toss the veggies in the remaining marinade and place on the baking sheet.
Step 3: Bake
Then, place in the oven and bake at 475F for 12 minutes. Remove the sheet pan from the oven, flip the pork chops and toss the veggies, return the sheet pan to the oven to bake for another 8 minutes.
Finally, remove the sheet pan from the oven and check the temperature of the pork chops . You are looking for an internal temperature of at least 145F.
If they have not reached that internal temperature, you can return the sheet pan to the oven Allow the pork to cool slightly and serve!
Step 4: Enjoy!

How long will these balsamic pork chops and veggies keep in the fridge?
Once prepared, allow the pork chops too cool fully. Then, transfer to an airtight container. Store in the fridge for up to 4 days.

- 16 oz mini potatoes
- 2 tbsp dijon mustard
- 1 tbsp honey
- 2 tbsp balsamic vinegar
- 1/4 cup avocado oil
- 1 tsp salt
- 1/4 tsp ground black pepper
