Process pork rinds in a food processor until they are the texture of bread crumbs - if you don't have a food processor you can place them in a large plastic bag and smash them
Set up a breading station with coconut flour, pork rind bread crumbs, and two whisked eggs each in separate shallow bowls
Bread each chicken piece by dipping it in coconut flour, then egg wash and finally press into the pork rind bread crumbs
Spray your air fryer basket with spray oil and place breaded nuggets in the basket - depending on the size of your air fryer you may need to cook the chicken nuggets in more than one batch
Preheat the air fryer to 400F and cook nuggets for 8 minutes or until the internal temperature of the nuggets reaches 165F
Remove the chicken nuggets from the air fryer and allow them to cool slightly
Enjoy immediately or store in an airtight container in the refrigerator for up to 4 days
