Ingredients

  • ½ cup sour cream
  • Juice from 1 lime ~ 1 ½ tbsp
  • 1 tbsp taco seasoning
  • 1 red bell pepper – finely chopped
  • 1 15oz can sweet corn – drained and rinsed
  • 1 15oz can black beans – drained and rinsed
  • ¼ cup crumbled feta cheese 2oz
  • 2 tbsp chopped fresh cilantro

  • Pour sour cream, lime juice, and taco seasoning into a mixing bowl and mix until evenly combined.

    This dip was SO good!! I couldn’t figure out what I wanted for dinner one night, it was NYE and I usually like to do “snacks” I knew I needed some veggies in my life given the sweets of the holidays but I just couldn’t find my taste. I saw Madeline post this on her IG stories and that was it I found what I was making. The nice thing is I typically have most ingredients on hand, minus the Greek yogurt. At first I thought that was a weird ingredient but it definitely works! One small addition for our taste was to add jalapeños for a bit of extra spice. I considered more cayenne but decided our taste buds would be looking for that jalapeño flavor. Definitely be making this again!
