This Chicken Stew recipe is perfect for a cozy winter dinner. This one pot meal is packed with chicken, vegetables and potatoes that make it so comforting and delicious.

What is the difference between a stew and soup?

Stews and soups are both hearty and comforting winter meals but there is a slight difference in their consistency. Soup features a liquid base as its primary component while stews like this chicken stew are thicker, with just enough liquid to cover the ingredients of the dish.

Serving suggestions

With protein, veggies, and potatoes, this hearty stew can be a full meal on its own, however, I love to have some bread to dip in the broth. If you want to try your hand at making some homemade bread, my Overnight Bread recipe is a great place to start.

You could also cook up some white or brown rice to serve with this chicken stew. It can be enjoyed on the side or even added to the stew.

I love topping this chicken stew recipe with parsley but there are several other tasty options for toppings such as shredded cheese, croutons, or green onions. You could also add other seasonings such as red pepper flakes or thyme.

Ingredients

  • Chicken Breasts – Chicken breasts are the star of this chicken stew; making it tasty, hearty, and nutritious.
  • All-Purpose Flour – All-purpose flour helps thicken the stew making a delicious broth that will have you going back for seconds.
  • Salt, Parsley, Black Pepper – These three seasonings create a classic chicken stew taste that makes for a very comforting dish. If you want to add other seasonings, red pepper flakes, garlic powder, thyme, or even a bay leaf are all delicious additions.
  • Butter – Saueting the veggies in butter adds a rich element to this chicken stew.
  • Celery, Carrots, Yellow Onion – These three ingredients come together to create a well-balanced and colorful stew.
  • Chicken Broth – Chicken broth is used to make a flavorful base for this chicken stew.
  • Yellow Potatoes – Yellow potatoes not only add extra substance to the stew but they also help make it thicker.
  • Worcestershire Sauce – Add Worcestershire sauce to this chicken stew for a slightly tangy, sweet, and salty touch.

Ingredient Substitutions

It is very simple to customize this chicken stew recipe to your dietary needs. It can be made gluten-free by using your favorite gluten-free flour instead of all-purpose flour, and it can be made dairy-free by using olive oil or another cooking oil instead of butter.

If you do not have worcestershire sauce you can add a splash of soy sauce, tamari or coconut aminos instead. This really adds nice depth of flavor to this chicken soup recipe.

You can also switch up the cut of chicken if you want to use boneless skinless chicken thighs instead of breasts. Just always make sure that your chicken reaches an internal temperature of 165 degrees.

This chicken stew recipe uses a classic combination of celery, onion, and carrots but you can add or omit veggies based on your preferences. Peas, corn, or green beans would also go well in this stew.

The slightly mashed, tender potatoes make this stew creamy without the use of heavy cream. If you prefer a super creamy stew you can add some heavy cream or even sour cream to add a tangy flavor.

How to make

Step 1: Brown your chicken and add veggies

To start, cut the chicken into small cubes. Mix 2 tbsp of flour with the salt, parsley, and pepper and toss the chicken in this flour mixture.

Next, heat oil over medium heat in a large pot or large dutch oven. Add the chicken to the warm oil and brown for about 5 minutes (Image 1).

Remove the chicken from the pot and add the butter to the pot along with the celery, carrots, and onion (Image 2). Saute for 6-7 minutes and then add 2 tbsp of flour and toss with the veggies (Image 3).

Step 2: Mix in the broth and add potatoes

Slowly mix in the chicken broth (Image 4). Add the cubed potatoes and chicken back into the pot (Image 5).

Step 3: Boil, simmer, and serve

Now, bring the stew to a boil, then reduce to a simmer. Simmer uncovered for 45 minutes.

Take a potato masher and mash down some of the potatoes in the pot to make them smaller. This will also make the texture of the soup a little thicker.

Lastly, stir in the Worcestershire sauce (Image 6), sprinkle some fresh parsley on top, and serve in a bowl. Enjoy!

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts
  • ¼ cup all purpose flour – divided
  • 1 tsp kosher salt
  • 1 tsp dried parsley
  • ¼ tsp black pepper
  • 2 tbsp butter
  • 4 stalks of celery – cut into slices
  • 3 large carrots – peeled and diced
  • 1 yellow onion – diced
  • 4 cups chicken broth
  • 2 lb yellow potatoes – peeled and cubed
  • ½ tbsp worcestershire sauce
