This Cheeseburger Breakfast Casserole is a delicious make-ahead breakfast dish. Prepare this ground beef breakfast dish on Sunday and enjoy it all week long.

Making this cheeseburger breakfast casserole is a surefire way to start your day off on the right foot. Most nights when I go to sleep I think about my first cup f coffee the next morning, but when I had this casserole in the fridge last week I fell asleep thinking of breakfast.

Have you ever realized how if people say something over and over again, its probably true? Something I had heard so many times is how important it is meal prep. It took me so long to jump on board with meal prep, but once I finally did I know that I would never go back.

The easiest way to jump into meal prep is to start with breakfast. I love making breakfast bakes like this cheeseburger breakfast casserole. You use just one pan to prepare a full week of breakfast.

I have found that eating lower carb really helps with my autoimmune disease symptoms, but I know that I need to eat more fat when I reduce my carbs in order to stay satisfied. This cheeseburger breakfast casserole is a great way to get as many good fats as possible in at breakfast time.

I usually think of bacon or sausage when I think of breakfast meat, but doing my first Whole30 introduced me to eating ground beef at breakfast and I was a huge fan. This hearty breakfast dish is beefed up (pun intended) with the addition of some seasoned ground beef and onions.

This cheeseburger breakfast casserole is so simple to make. I made a video of myself making this dish to show just how easy it is.

Ingredients and kitchen tools you need to make a Cheeseburger Breakfast Casserole

This cheeseburger breakfast casserole packs all of the flavor of a cheeseburger into a delicious and healthy breakfast dish. My girlfriend is usually very complimentary of my food, but the last time I made a breakfast casserole, it wasn’t her favorite. I knew I had to redeem myself with something extra tasty.

To make this recipe you will need some simple kitchen items starting with a 13×9 baking dish. Other than that grab a whisk, a frying pan, and a sharp knife. Before you get started cooking I highly recommend putting on your favorite podcast or playlist.

The ingredients you will need for this recipe are a dozen eggs, 1/2 lb of ground beef, 1/2 a yellow onion, and cheddar cheese. I use salt and pepper to season and avocado oil to cook. Be sure to spray your baking dish with avocado oil spray to grease it before you bake.

How to make a Cheeseburger Breakfast Casserole

To make this cheeseburger breakfast casserole start by dicing 1/2 a yellow onion and cooking the onion in avocado oil in a frying pan over medium-low until soft and fragrant. Add the ground beef to the pan to brown and season with salt and pepper. Cook the ground beef over medium until cooked and set the onion and beef mixture to the side.

Spray a baking dish with avocado oil spray and crack 12 eggs directly into the pan. Whisk the eggs together and pour the onion and beef back into the pan. Spread the cheddar cheese on top and place in the oven.

Bake at 400F for 30 minutes and then slice it into 12 squares. Enjoy immediately or store in the refrigerator for up to 4 days. Reheat in the microwave or toaster oven.

Cheeseburger Breakfast Casserole

A low carb breakfast casserole with all the flavor of a cheeseburger

Ingredients

  • 12 eggs
  • 1/2 lb ground beef
  • 1/2 white onion diced
  • Salt and pepper
  • 1 1/2 cups cheddar cheese
  • 1 tbsp avocado oil
  • Spray avocado oil
Prevent your screen from going dark

Instructions

  • Preheat oven to 400F
  • Pour avocado oil into a frying pan over medium-low heat
  • Add diced white onion to the pan and cook until soft and fragrant – about 3 minutes
  • Add 1/2 lb of ground beef to the pan, increase the heat to medium
  • Break the beef up into crumbles and season with salt and pepper
  • Continue cooking the beef and breaking up with a spatula until brown and crumbled
  • Remove the pan from the heat and set aside
  • Spray a 13×9 baking dish with avocado oil
  • Crack 12 eggs into the greased baking dish and whisk them together until fluffy
  • Pour beef and onion mixture into the baking dish with a spoon
  • Season with salt and pepper
  • Sprinkle cheddar cheese all over the top of the dish
  • Bake in the oven at 400F for 30 minutes
  • Remove from the oven and cut into 12 individual squares

    This recipe has become a staple. I do tend to add some peppers and/or mushrooms and use dairy free shredded cheese, but it’s so good and is perfect to cook up at the start of the week for really any meal.
