Apple Pie Overnight Oats with Sauteed Apple Topping

These Apple Pie Overnight Oats are my favorite breakfast to make to welcome fall. The sautéed apple topping is meant to mimic apple pie filling. I serve that on top of creamy, brown sugar cinnamon overnight oats for a breakfast that is equal parts decadent and satisfying. Each serving has 13g of protein and 8g of fiber to keep you full until lunch.

  • Great on the go – I love overnight oats for a quick and easy breakfast that I can take on the go on a busy morning. I like that I can prep a batch, or even a double batch, on Sunday and have breakfast for most of the week!
  • Satisfying breakfast or snack – Each serving has 13 grams of protein and 8 grams of fiber, so it is the perfect satiating breakfast or snack to hold you over. You can add even more protein with an extra dollop of greek yogurt on top and a garnish of chopped nuts.

Ingredients You’ll need

  • Milk – I use 2%, but you can substitute any milk you prefer. Use a brand like Fairlife for a little extra protein
  • Greek yogurt – Greek yogurt adds protein while making the overnight oats the perfect creamy consistency. You can also use regular yogurt, but it will be a little thinner.
  • Oats – use rolled oats for best results. They hold up and maintain their texture after sitting overnight.
  • Chia seeds – chia seeds are an easy boost in fiber, protein, fatty acids, which makes the oats satiating
  • Apples – use a sweeter apple such as a honey crisp for the best results.
  • Lemon – the lemon brightens up the apples and gives the apple topping a little zest to balance out the sweetness
  • Cinnamon – the cinnamon gives the the apple topping the classic apple pie flavor

Honeycrisp apples are the best choice because they are sweet, crisp, and hold their shape well when sauteed. Fuji, Pink Lady, or Gala apples also work great. Avoid very soft apples like McIntosh, because they turn mushy when cooked.

How to make Apple Pie Overnight Oats

Step 1: Whisk together milk, yogurt and brown sugar until evenly combined. Then, add rolled oats, chia seeds, ground cinnamon and salt to the bowl and mix again.

Step 2: Saute apples in melted butter over medium heat for about 5 minutes – tossing occasionally.

Step 3: Add lemon juice, brown sugar, cinnamon and nutmeg to the pain and toss to coat apples. Give the oat mixture another stir and place in the fridge to chill while the apples cool to room temperature.

Step 4: After about 20 minutes, prepare 3 servings of the oat and apple mixture by evenly separating oats into 3 containers and topping each one with ⅓ of the cooked apples.

Place containers in the refrigerator to chill overnight or at least for 4 hours before eating. Serve chilled with some chopped nuts on top!

Mad’s Expert Tips for the Best Apple Pie Overnight Oats 🍎

  • Do not skip the sauteed apple topping – This topping is what makes these overnight oats taste like actual apple pie and sets this recipe apart from other apple overnight oats recipes. It takes just 10 minutes and makes a huge difference.
  • Make the apple topping ahead – In addition to making the oats ahead, the sauteed apples can be made ahead and stored in the fridge for up to 4 days. To warm them, reheat in the microwave for 30 seconds or enjoy cold right from the fridge.
  • Use Greek yogurt, not regular yogurt – Full fat Greek yogurt makes the oats thick, creamy, and high in protein. Regular yogurt is too thin and will give the oats a thinner texture.
  • Stir before eating – The oats settle and thicken overnight, so give them a good stir and add a splash of milk if needed to get the right consistency.

Storage

To store, place overnight oats and apple topping in separate airtight containers. Place in the fridge for up to four days.

Ingredients

Oat Ingredients

  • 1 cup 2% milk
  • ¾ cup plain greek yogurt
  • 2 tbsp light brown sugar
  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • 1 tsp ground cinnamon
  • ¼ tsp kosher salt

Apple Topping Ingredients

  • 1 tbsp salted butter
  • 2 cups peeled and diced apples I used honeycrisp
  • 1 tsp lemon juice
  • 1 tbsp light brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • chopped nuts like pecans, walnuts or almonds for topping optional

Instructions

  • Prepare oat layer in a medium mixing bowl. Whisk together milk, yogurt and brown sugar until evenly combined. Then, add rolled oats, chia seeds, ground cinnamon and salt to the bowl and mix again. Set aside.
  • Heat butter in a nonstick skillet over medium heat. As soon as the butter is melted, add the apples and toss to coat in the butter. Saute apples for about 5 minutes – tossing occasionally.
  • Add 1 tsp lemon juice to the pan and toss to coat the apples. Then, pour in the brown sugar, cinnamon and nutmeg. Toss again to coat the apples thoroughly in the sugar and seasonings. Reduce the heat to low and saute for another 5 minutes.
  • Give the oat mixture another stir and place in the fridge to chill while the apples cool to room temperature. After about 20 minutes, prepare 3 servings of the oat and apple mixture by evenly separating oats into 3 containers and topping each one with ⅓ of the cooked apples.
  • Place containers in the refrigerator to chill overnight or at least for 4 hours before eating.
  • Serve chilled with some chopped nuts on top!

Recipe Notes

  • You can make the oats and the apple topping ahead of time and store it in the fridge for up to four days.
  • Stir the oats before eating to make sure they are the right texture. If they are too thick, add a splash of milk. 
  • Use Greek yogurt rather than regular yogurt for a thicker and creamier consistency.
