Instructions
Prepare oat layer in a medium mixing bowl. Whisk together milk, yogurt and brown sugar until evenly combined. Then, add rolled oats, chia seeds, ground cinnamon and salt to the bowl and mix again. Set aside.
Heat butter in a nonstick skillet over medium heat. As soon as the butter is melted, add the apples and toss to coat in the butter. Saute apples for about 5 minutes - tossing occasionally.
Add 1 tsp lemon juice to the pan and toss to coat the apples. Then, pour in the brown sugar, cinnamon and nutmeg. Toss again to coat the apples thoroughly in the sugar and seasonings. Reduce the heat to low and saute for another 5 minutes.
Give the oat mixture another stir and place in the fridge to chill while the apples cool to room temperature. After about 20 minutes, prepare 3 servings of the oat and apple mixture by evenly separating oats into 3 containers and topping each one with ⅓ of the cooked apples.
Place containers in the refrigerator to chill overnight or at least for 4 hours before eating.
Serve chilled with some chopped nuts on top!
Notes
You can make the oats and the apple topping ahead of time and store it in the fridge for up to four days.
Stir the oats before eating to make sure they are the right texture. If they are too thick, add a splash of milk.
Use Greek yogurt rather than regular yogurt for a thicker and creamier consistency.
